    Thank you! In this quarantine I made three different wines, two kinds of bread and so many pizzas inspired by you.
    Not only, I start to cultivate grapes in my backyard to the next wines.
    Next year, I'll try sausages and cured meat.

    I started my second batch of your Banana Wine this week and finishing my last bottle of the last batch tonight. After adding some bentonite to clarify my last batch it was unbelievably good. Beautiful color and clarity and excellent mouth feel and flavor and aromas. I think I will start curing meats next. Thanks for the excellent content and production.

      for balancing the taste also to protect the must towqrd contamination. You can use acid blend or lemon/lime juice ro reach pH 3.0 - 3.6

    Sir this is just a suggestion you can do if you see fit
    In the second fermenter before you pore the wine in the bottles you can whisk it to let the bad gases go out of wine , it has some sulfur de oxide that smells bad , I heard it from a couple who made some wine , they said it make the wine smell even better

    Hello my friend, as usual you are doing fantastic job...... With lovely presentation. I made the orang wine with your recipe. I just used brewing bag to keep pealed oranges in it with water n sugar . (It saves efforts of juicing the oranges) it came out fantastic😍😊 i used plastic bottles(soda bottle) to store half the wine to keep it sparkling n half in regular wine bottles. Plastic bottles keeping the carbon dioxide sealed in bottles only so keeping the wine sparkling till pouring in glass. Looks little odd but serves the purpose. Anyway thanks a lot dear friend for your recipes because of you l learn to make beautiful wines n champagne.🍾🍷🥂🤗😊😊👍🏼👍🏼

    Today, I recreated your Orange Wine and Liquor. I am so looking forward to enjoying them.
    I have tried to limit my sugar content and have been sweetening my wine post-fermentation with Stevia. I really am happy with the flavor.
    I will also be sweetening the Orange Liquor with Stevia and will let you know how it turns out.
    You've asked for suggestions, I have little to contribute to your brilliant productions but, with so many people with blood sugar problems, I thought I'd share the Stevia idea.

    This was a very interesting demonstration. My mother used to make something similar with oranges, rice and passa. She would ferment it for 28 days, filter it thru cloth and then she would use the residue to fertilize vegetable plants and roses.

    HI.... I save my old plastic fizzy wine "corks" and bottles which can take the pressure better.
    This way you can miss out the sugar cubes and bottle the wine when the air bubble has nearly
    stopped.

    Thank you! Great video, clear instruction! I have a set up for a 5 gallon batch of wine...would one simply multiply 1 gallon quantities by 5, or are other adjustable needed?

      Yes multiply by 5 but the first time is better to make small quantity to check if you like it

    Great and inspiring video! I am going to give it a try. In Greece, I can easily find some sweeter varieties of orange. Would it be better if I stick to the most sour ones? And if I go for the sweeter ones, will it affect the amount of sugar I put in the recipe?

    Do you think adding the orange zest right into the brew or perhaps letting the zest sit in sugar for a few hours before adding it to the juice would add an extra dimension of flavour?

    It’s January, not sure about the weather where you are. However let me suggest an “experiment” if you can get the fruit.
    Applejack is a very historic drink here in the states. It is basically distillation by freezing.
    Perhaps you should try Orangejack.
    Basically do your fermentation as usual then instead of bottling everything you freeze the wine overnight. The water freezes, and you pour off the alcohol into a new container.
    Save the frozen “wash” for the next batch. Repeat the freezing - separation process again until it will no longer freeze. What is left is a “distillation” with intense alcohol and flavors. CAUTION!! Unlike a stilled product this still contains “the heads” methanol is what gives you the extreme headache.
    So don’t drink more than an aperitif glass full of- or you WILL regret it!

    you should make old fashioned dandelion wine you will love it i will tell you my recipe from a old news paper clipping. first pick only the dandelion wine heads off the stem you need to collect a gallon of them (also i believe you should use them right away). do so only when the sun is out because otherwise the flowers will close and it will be bitter. so you rinse off the gallon of dandelion heads and boil then in 1 gallon of water for 20 minutes. this will make a green juice that smells like spinach. then strain the dandelion heads with a strainer and put the 1 gallon of water in the fridge to cool off for 20 minutes. then dissolve 5 pounds of sugar in it. get 2 oranges and 2 lemons and cut them 4 ways and squeeze the juice out in the water and drop the fruit in then you can put your yeast in and let it ferment it might be done in as little as 3 days. then you bottle them when fermentation is done it will be strong and sweet. but i can tell you from experience if you wait 6 months like your supposed to with this recipe it will be delicious. and in 6 months you should filter it in to other bottles according to the recipe but i did not bother. i drank most of mine right away but left one bottle to sit the appropriate time and then it was alot thicker and extremely good. i will be doing it again hopefully soon.
