I live in Chicago and was so surprised when I found out giardiniera and Italian beef aren't universal

The cheese dip was for the fries. The cheese on a beef sandwich is usually sliced. I recommend provolone.

You're dealing with a complete rookie when they have to ask how would a person want an Italian beef. You get it double dipped. That way there are no dry spots at all.
You don't dip the Italian beef in cheese. The cheese was for the fries! You eat the fries when they're hot, and you dip them in the cheese.
You don't sit around and jabber about it. And you certainly don't sit there and poke at an Italian beef sandwich and let it get cold.

Dude asked for cheese fries and then proceeded to dip his fries in extra "dip" sauce. And then dip his beef in the cheese sauce... SMH

Cheese is for the fries or steak sandwiches in Philly...In Chicago beefs are eaten without any cheese on them. Personal preference may wish for cheese but consensus is it takes away from the beef itself.

yeah you got to have a dip that's got to be messy or it's not a authentic Italian beef..
Benny the old school stands before Portillo's got really fancy they used to have counters where you ate but there were no stools so I can lunch time you would go leave your job and head over to the hot dog place that had the Italian beefs and you would just stand at the counter that would be against like the window and no chairs or stools and eat your sandwich
