If I've learned anything about decorating cakes its that one needs to find their own method. I learned from many different decorating masters and through observation and practice I have a unique system. This provides a lot of wonderful tips but its more than likely going to be different than someone else's preference. That's OK people!
I went to a baking academy in Taiwan and instead of using manual lazy Susan's, they had electric wheels similar to those used in ceramic making. Super cool and fast, especially when we had to do frosting sculptures on cakes with whipped cream!
Oh, FFS. What an idiot. PILING ON FROSTING TO HIDE YOUR MISTAKES IS NOT THE WAY TO MAKE A GOOD CAKE, YOU NINNY. You just get a big goopy pile of butterfat. That may be YOUR idea of a good cake, but to me it looks like something a kid would want, NOT an adult.

@@Serai3 What mistake? His cake was beautiful, and definitely looked better than the first one! I've been a cake decorator for 40+ years, and would not want a cake of mine to look like the first one did when it was cut. It's called "being a professional". Oh, and it's not "butterfat"; it's "buttercream" - there is a huge difference between the two. So next time you bash someone for their work, maybe you should first learn a bit about it so you'll at least have a clue as to what you are talking about.
You don't need that much frosting for the crumb coat. A crumb coat is a thin layer of icing to catch crumbs, not a normal layer of frosting, or I'll,have way too much frosting in one bite.
Serai3 Most people eat cakes at celebration like birthdays and weddings which, even in the biggest families only happen a few times a year. Unless you're serving this cake to a diabetic the guests would be just fine.
No, sorry. This is not a matter of something sweet. This is a matter of at least FIVE times as much frosting as a cake actually needs. This thing is barely even a cake - it's a block of frosting separated by a couple of inches of cake. It's disgusting - gloppy spoonfuls of butter and sugar. Who the hell eats like that? Who even thinks that's desirable? What the hell ever happened to frosting being FROSTING - you know, a layer that COMPLEMENTS the cake, not smothers and drowns out its flavor. _Gringos_, man - you guys can ruin anything.
Crumb coating: a thin layer of frosting to seal in those dastardly crumbs of cake. Uh huh, so he plops three huge scoops of frosting on the cake, lol! I'm not really a baker, but isn't a crumb coat supposed to be somewhat see through?
yes, it is. But it doesn't really have to be. He was clearly going for very thick icing. As long as your crumb coat is thinner than you end goal, it does the trick!
I guess it depends on the amount of crumbs coming off of the cake, and the bakers liking too. It is usually see through, but a thicker crumb coat will do just fine. hope this helps!
