I raise my own, but I dont want my eggs fresh daily. I want then around 2 weeks old for most things, but I want them at least 30 days old for boiling. 45 days is even better. Just because the older they are, the easier they peel.
But it also matters what your food is eating. The average egg weight of a large egg is about 58 grams and most have around has around 6 grams of protein. I had my eggs tested out of curiosity by 3 different companies. Our large eggs are on average are 20 grams heavier than the grocery store cousins and have almost double the grams of protien per egg. That was consistent with all 3 companies findings. Numbers werent exactly the same but they were so close to the same that it wouldnt make much difference. I think its bc ours dont get commercial feed. I make our feed and we grow greens for them all year long. Not to mention they're getting all our leftovers. Any thing that doesnt contain chicken gets fed to the chickens.
Farmers could put pressure on the consumers to buy fresh eggs by not supplying distributors, but really its a matter of personal governance, people will probably buy 12 dollar eggs from across the oceans just to get to go visit their favorite walmart employee
