It looks like you have a lot of you're libraries/happiness making buildings closed and not located centrally amount your housing. This is a big reason why your happiness is low. You can also click on the happiness icon to individually see what each house wants/needs, like wether they need a well, tavern or if their to close to something that they don't like, like a quarry or charcoal maker. If you do these things you're guarantied happiness in the 90s. Really loved the video, keep up the great work! Edit: Looks like you've already done that on your island, but not on hers on account of the mass destruction, mb lmao!
in an old version you could build working water wheels in moats, you may want to try that trick in that spot where the water wheel had blocked the wall construction project. though that game version was over a year ago, so it may not work anymore.

I just picked up the game about a week ago and have been glued to it

I did actually do that for the farm remodel on both islands, and the bath houses. So it is still in the game and working great.
