I have never heard of charcuterie before but boy do I love the idea. Great to serve as an appetizer but what about having a charcuterie party were you supply most of the food items but ask everyone to bring something to contribute. i think it would be super fun and everyone would know what a charcuterie is. Since there isn't a ton of meat here, simply swap the meat out for folded provolone or swiss cheeses and possibly some bocconcini (mini marinated mozz balls) and roasted red peppers.
Either one works. Whatever is easier for you and makes sense time wise for serving. Just keep in mind leaving food out for more than 2 hours at room temp will start to grow bacteria!
