In 2021 my Dad who was a personal chef passed away, he loved BBQ and I really wish I had gotten to share this channel with him. Watching your channel is extremely cathartic and I really love what you do. This is one of my all time favorite things to eat and watching how much effort you put into not only the edits and production of these videos makes me, my kids and so many others happy. Keep doing what you do and thank you for making such great content and keep up the good work.

There’s a spot in the Mission that covers the tortilla in a nearly edge to edge layer of guacamole. Which is rad because it surrounds the entire filling and every bite rocks.
Growing up with NorCal Mission style burritos and to lesser extent SoCal California style burritos this makes my mouth water. So much good Mexican style food here in California. I love fresh flour tortillas. Nice video.
The one thing they did at my favorite Mex restaurant growing up that I’ve never seen outside of Cali is put the whole burrito in this steam box thing after covering it with cheese and red sauce.
Cali burritos are the best. Here in AZ they make one called the El Rey burrito. It has enchilada sauce in it and it is a great variation of that California style burrito

If you’re ever in Southeast Texas, there are three new places that offer these, all owned by California runaways. Mr. King Taco in Nederland and The Burrito Factory in Port Arthur. And Burrito District in Spring. They’re all fantastic. I lived in Oceanside, California for 4 years when I was in the Marine Corps and my wife is from California, so we have been chasing these in Texas for a while now. 😂
one of the best burritos I've ever had was at Pepe's in Santa Rosa (I actually had 2 in one sitting). I don't recall fries in a burrito. What a great idea, and one I wish I'd thought of myself when making burritos!
It probably was a Mission style burrito. Although you can get both styles all over the state, California style had its origin in SoCal around San Diego and Mission style is more associated with NorCal and San Francisco.
That looks awesome Chud. The way to make it better would be to replace the pico with fire roasted salsa. The same ingredients but get red jalapenos instead of green. They can be harder to find but are more ripe and add a sweeter and less harsh flavor. Roast all the veggies on the grill or smoker and get them well charred. Then toss them in a blender. It amps up the flavor to another level. You and the ladies will not want to back to pico after you have made that.
As an honorary member of the Mexican community (wife + ⚽ team), The fact that you didn't use an onion to clean the grill made me😮. Everything else is spot on. I hope you enjoyed the beer when you made the marinade

one quick suggestion/option for the pico. Adding equal part of cucumbers to onion and a lot of garlic powder is a game changer in my opinion. Don't knock it till you rock it!
I get this burrito at Uncle Tito’s a local Mexican restaurant. The difference I get is it smothered in a red, spicy chilaquiles sauce, no white cheese sauce; to freaking die for!!! If you like spicy😊
i like to cook skirt steak by dropping it right on coals for a really great char about 60 seconds on each side. The Chud grill would make that really easy, just slide the grate out of the way and close the lid when your done.
I live in San Diego California and we’ll go to TJ all the time. My father-in-law lives there and now I talked to the #MIN of the restaurant owners and they do use soy sauc in the Tijuana region as part of they’re marinade as part of their marinade.
On the critique: the toast is non traditional, and you definitely missed an opportunity to make a house red sauce to dab with each bite, but other than that, this was a perfect representation of the Cali Burrito, well done Brad!
I would like a good garlic press. I tried the cheapo & brought it right back. It might squish a grape, but garlic was not going through this thing. What do you recommend?

Not dissing but Cali native for 59 years but worked in LA most my life but never had fries in a burrito. Most were 2 egg omelet, hash browns, cheddar cheese, pico and your choice of sausage/bacon or ham some also had a veg choice.

To up the ante, melt some cheese on the flattop, then roll the burrito onto the cheese so you have a crispy crust on the outside.
