I modified his recipe slightly for my own pallet and have been doing that all summer and making great Rum Collins. Good Cordials and Shrubs are great to have around and can make it easy to whip up a quick but good tasting cocktail.
Loving this hardcore tiki alchemy. Perhaps a reliable centrifuge-free method for clarifying orgeat is the next frontier? I know kevin kos did it by adding citric acid to curdle, but that only worked for storebought and then youre left with sour orgeat! Wondering if theres a more sophisticated clarifying agent available.
I’ve found the coffee filter to do a great job and deliver clarified orgeat every time. Others have had a harder experience filtering, but it works. And while a super clarified orgeat might be great, I do wonder what flavor is left from the almond and if the alternative of simple syrup + almond extract might be better.
I can't wait to try this. Can you store the orange peels and oleo-saccharum in a jar for use in old fashioneds after taking it out of the vacuum bag? My wife found me a jar online of orange peels soaking in thick syrup that you just put in drinks and they were delicious. I would love to recreate that.
@@makeanddrink Worked great. After 24 hrs I have orange peals soaking in oleo-saccharum for my old fashioneds. Thanks for the inspiration and direction! I'd attach a photo but don't think I can here. I'll be doing this from now on!
I made oleo-saccharum with one earlier this year, I still have a little in the fridge. I added some to a sugar glaze for a pound cake, a spicy citrus glaze for salmon and several cocktails. Enjoy, :)

How long did the mix last?
Did you try it in a hot buttered rum?
Probably only last for a couple weeks, but you can freeze it. Havent tried it in a hot drink yet.
