Dara, you're so lovely and sweet. I've never been into jicama but your vid has given me the urge to give it another go. You also mentioned that non-GMO corn can be hard to find-- well, not at Trader Joe's. Their regular corn is non-GMO (just like any organic), in fact, all their conventional potatoes and produce are also non-GMO because they own most of their crops and have been aware of this issue since the 80's. Just sharing what I've learned. Thanks again for the mock rice demo!

Just a suggestion - perhaps you already do this anyway with other hard produce - try using the tip of the knife when beginning to cut your jicama or turnip - then press down with the rest of the knife to cut into chunks (then I'd peel the pieces after that) - it's safer and I find it more effective.
I wonder if we can eat raw spaghetti squash too :/ And I just feel like giving you a big hug for the explanation on regular white rice. Some other people I watched claimed you would get lean on rice, a high carb low fat diet, and it would just take time to loose weight and gain energy, but this no-grain lifetstyle is so much more energizing and it makes so much more sense.

Carla Ocampo Hi Carla one of the vitamins that is recomended for a vegan is B12. Hope this helps I would look at the book Becoming Vegan by Brenda Davis and Vesanto Melina it is a great resource for a new Vegan. Hope this helps :)
Carla Ocampo vitamin D and B12 can be taken sublingually :) most people need these supplements. and if you are not having the adrenaline in meat you will feel tired as well as if you are detoxing. thank you and hugs!
Carla Ocampo Agree with everyone else, but caution you to be aware of how many calories you are taking in: The biggest mistake people transitioning make is to undereat, which causes almost immediate fatigue. Omnis tend to fill their plates by volume, without thinking about the energy density of plant foods compared to animal foods, which average higher in fat and protein. Good luck!

Dara, just curious. Why not just go straight to the "S" blade, and then squeeze out moisture? Why the long shredder blade first? Thanks!
