Paneling Polysurfaces Using Grid Projection

Thank you for the tutorial.
I am looking for a setting display like in the tutorial where U and V axis are shown on the surface, without using "dir" or "showdir" command. How can I set Rhino to show the U and V direction on a surface by default?
