Pavakkai Pitlai | பாகற்காய் பிட்லை | Ammavum Naanum Episode #23 | Rakesh Raghunathan

  • A recipe that is unique to the Thanjavur region. A close cousin to the sambar but still has its own uniqueness and a lot of influence of the Thanjavur Marathas. A must in most of the Thanjavur households, this recipe is a winner.
    Ingredients:
    * Bitter gourd - 2 med size (cut in roundels)
    * Boiled white channa/ chickpeas - 100 gms
    * Tamarind - 1 med lemon size ball
    * Toor dhal - 100 gms (pressure cooked with turmeric)
    * Water - 500 ml
    * Jaggery - 1 tsp (powdered)
    * Salt
    For Spice Paste:
    * Coriander seeds - 2 tbsp
    * Channa dhal - 1 tbsp
    * Asafoetida - 1/2 tsp
    * Whole black pepper - 10 nos
    * Red chillies (round) - 4 nos
    * Fresh grated coconut - 2 tbsp
    Tempering:
    * Ghee / Coconut oil - 1 tbsp
    * Mustard seeds - 1 tsp
    * Curry leaves - 1 sprig
    * Red Chillies - 1 or 2 nos
    Method:
    1. Pressure cook toor dhal with turmeric and set aside.
    2. In a wok, sauté and cook the bitter gourd roundels till soft
    3. Extract tamarind juice from 500 ml of water
    4. In another vessel bring to a boil the tamarind juice along with salt.
    5. Add the sautéed bitter gourd to the boiling tamarind juice and let it cook.
    6. Add the boiled toor dhal to the tamarind and bitter gourd mixture.
    7. Also add the boiled white chickpeas to the mixture. Bring to a boil.
    8. In another frying pan, heat oil and fry all ingredients mentioned under ‘spice paste’ and allow to cool. Grind to an almost fine paste.
    9. Add this paste to the boiling bitter gourd, chickpeas curry.
    10. Add some jaggery and check if flavours are balanced. If it requires more salt, add some at this stage.
    11. In a wok, heat ghee/oil and temper with mustard seeds, red chillies and curry leaves and pour over the pitlai / curry.
    12. Serve hot with rice with dollops of ghee.

    Will try and share my comments. I have done Pavakkai pitla many times but not with channa. So will definitely try it. And I really wanted to share about. The taste was amazing. Tried halwa for the first time. And adhu romba chamatha vanthurthu. 😊😊 Everyone praised me for the sweet. Thank you so much😊😊👍💐

    Remembering my mother's pavakai petlai
    She is such a dedicated cook
    I still remember she does all this type of recipes for our entire family members @ 10.
    During festival times the variety of such food she makes and it's unique taste just awesome.
    I am quite surprised how all this mayaram decedents adopt such a unique recipes which has lot goodness flavour and taste.

    I just have a doubt... Except for the pavakkai and channa, what is the difference between arachu vitta kuzhmbu and pitlai? The grinding ingredients are all the same. Right?

    Hi Rakesh just now seeing your videos. My suggestion is you can make in one pot. Like..saute veg and boil it for some time and then add tamarind water in the same vessel then add things as your recipe. May be it will be useful and easy for the people who are trying for the first time.

    You need to add fried coconut finally & that completes pitalai. Poricha kuzhambu is another similar receipe without finally adding fried coconut.

    Recently have started trying out traditional recipes as I am craving for my mom's food. Keep sharing such recipes.p.s. I made as per your recipe, white pushnikai morkootu. Another gem of a comfort food, I felt. It turned out well.(due to current health scare, I added a slight variation- black pepper and turmeric) Good luck.( Followed your other series of native recipes too, very nice, some time back.     To the thalippu we add some grated coconut also and roast it brownish. Sometimes my mil used to add fried appalam also. Tastes wonderful. It's a great recipe otherwise.

    rasa vangi and parkkai pittlai 9 are dishes from Maharashtra.Vangi in Marathi for kaththarkkai and pittlai for making dish with coconut and bengal graim

    Rama enjoyed your Pavakkai Pittlai. I did not realize you could add chick peas or as Rakesh suggested, Kabuli Channa or black eyed peas. I love this dish and will add one of them to this dish. My cooking is based on palakkad cooking, in my recipe I do not fry the coconut. But I will try it certainly. Best wishes. Be well, be safe. 😊

    Hi Rakesh, I watch and enjoy all your episodes and love your stories as well. I hail from Vellore district and our pavakkai pitlai is a bit different. Your pitali is what we usually call koottu. Our pitlai does not have kondai kadalai in it. Instead, we use half chana dal and half toor dal in the pitali. The chana dal is soaked for some time and cooked along with toor dal and added to the tamarind-pavakkai mixture. The ground spices are the same, though we always add a few grains of jeera as well. In the tempering, we sometimes add a half teaspoon of coconut gratings apart from the usual mustard-urid dal- curry leaves, fry it to brown add to the pitlai. Thanks for your lovely series.

    I enjoy your program. You must not add rajma or kala chana at all. It will not be authentic. You must add a spoon of urad dal and reduce little chanadal. Please try that way it will be more tastier. Pittlai is a kerala delicacy. Please let me know after you try this. And reduce a little of boiled toor dal too

    I finally add some coconut scrapping along with mustard and curry leaves. That adds more taste for any kind of pitla. I enjoy Rama amma's cooking and the way she explains.😊😊
