I made yogurt many times but it seems that, this is the authentic and perfect way I usually keep it in oven in winter season n I use cold wet clothes around pot in summer I ll follow ur method next time. Best wishes..keep sharing such good information 👏
Please note - if you buy Desi cow's milk which has the basic 3.5% fat - your yogurt will be more healthy but not very thick or creamy. Traditional Indian Desi cow's like Gir/ Sahiwal etc. have better traits/ healthy features & characteristics that gives milk which benefits us. Up until the 1950s we had milk from these cows. But later on because of the advent of hybrid Jersey A1 cows in India - the milk production increased a lot along with the fat content. Now the milk has 6-7% fat. Buffalo milk has 8-10% fat. So the yogurt will be thick & creamy. But If you're a regular (3 times a day) milk drinker & a dairy eater - ghee/ curds/ mawa koa/ paneer etc. you will become obese without physical activity. So, go ahead & consume with awareness & co- ordinate with exercise. To recognize a Desi cow - look out fr the prominent hump on its back & lots of folds on its neck. A2 cow milk is Desi milk. It's little expensive. Also in the shop purchased yogurt tubs (in my opinion) - the milk is only "heated" - not boiled. This is to maintain the white colour of the milk. Boiling makes the milk change to a cream/ ivory colour which is not appealing to many people. Hope all these info helps.
In addition to my earlier comment - People from the North/ West/ East & Central parts of India prefer mild/ bland or sweet yogurt. But in the South of India - people prefer sour (khatta) curds/ yogurt & buttermilk. This is becoz they make stews & gravies (like Kerala MorKutan/ Avial/ Kaalan etc.) with the sour yogurt on the days when they don't use tamarind. And traditionally, sour "buttermilk" (plain or spiced with crushed green chilly + ginger + salt + curry leaves) is mixed with rice & eaten regularly. Buttermilk is also drunk in tall glasses along with their meals.
@@sharidaboodoo5159 I recently saw a video where 3 green chilis were used with stems, and uncut, left in the yogurt starter for one night I believe, then she removed the chilis and added the starter to the milk. She got beautiful yogurt with no chili taste.

If the milk is watery, curd will be watery, boil milk for a longer time n add two tspns of curd for 100ml of milk or buy orange color milk packet which is thick n try(basically u need thick milk, for thick curds)

How many we should put to get a good yogurt? Mine which I make from supermarket yogurt is similar to a fresh cream from the milk, it is kind of sticky and I am afraid to use supermarket yogurt if they might put some bad stuff in it. Good day Sir my mom loves ur videos. I followed ur receipt word for word twice but yet my yoghurt still remaind in liquid form. I don't know what went wrong. I have also tried other yoghurt receipts including using probiotic tablets and still nothing. I use cultured full cream plain yoghurt with full cream milk. I have wrapped up my yoghurt to keep it warm. I have used the oven to keep it warm. I dont understand ur 3 boils but I checked out the comment section which somewhat explains it. Please tell me what am I doing wrong. I have used up 6 l of milk sp far and 2 of those were used on yhis receipt pls help me. Regards
You mention you have to boil the milk three times. Would you please explain. Do you cool the milk between each time you boil it? Thank you Doctor. Your videos are very helpful. They have inspired me to study more Ayurveda and integrate the teachings into my lifestyle.
Once the full boil comes - reduce the flame & allow to simmer fr an extra 1-2 minutes. Then remove to cool till lukewarm. Or test the heat - i.e. until your palms can handle the heat without getting burnt.

If u don't have curd as starter then use 5-7 green chilli stems since they contain the Lactobacillus acidophilus bacteria that turn milk into curd.

Maybe you put too much milk vs yoghurt? I use 1L of milk only 2 tbsp of yoghurt. But it didn’t come out thick though… but not liquidy too.

Sir... We do regularly ...so no need to go this much ..after boiling when it get cool down just put a half table spoon of yogurt at night tats enough
