Since they couldn't say no twice to her invitation, they were forced to meet her in Central Perk so the easiest way was to come up with a plan that could make them leave early. Before this, Monica had already told Phoebe that she spoke with Chandler to call them and said he and Mike had an accident. So to make it short, the accident isn't true which is why Phoebe didn't leave.
