Camp - Here in Red Lodge Montana (located at the base of the Beartooth Mountains 60 miles from the NE entrance of Yellowstone) we have the Yellowstone Big Horn Research Association at what was informally known as the “Princeton Camp” has been the home of numerous field camps over the years as well as at least one Penrose Conference. I do not know capacity but the geology is world class. Field camp was the defining moment of my undergraduate experience. I know a lot of programs have eliminated them and our profession has paid the price. Good luck in your search. You are an excellent field geologist and educator and your content never fails me in joyful remembrance of this amazing world in which we live.
You know you are a geology nut when... 1... you annoy your whole family by stopping at any roadcut that is showing some exposed rocks. 2... you read papers about the formation of the Cascade volcanoes even though you live thousands of miles away in Germany. 3... you watch a Nick Zentner video only tangentially related to Geology.
Possible camp location in Washington is Soap Lake Natural Spa and Resort. I’ve stayed there and it is centrally located to a lot of geology. It’s at 236 Main Ave E, Soap Lake WA
Lake Wenatchee YMCA camp might be a possibility. Lamar Buffalo Ranch (part of the Yellowstone Institute) is a great place but not sure if they would have any unfilled blocks of time. I used to go to classes there every year for a while. Wenatchee Scout a Vista by Mission Ridge might still be functional but not sure how large.. Good luck!
Indiana University Bloomington runs a field camp/station in Caldwell, Montana. It's an amazing facility right in the middle of spectacular geology. Not sure if they rent it out to other schools, though...
You might consider Fort Flagler or Deception Pass Washington State Parks. Not sure the Geology part of the area is sufficient for what you are looking for.
Many colleges, universities, and boarding schools will rent out their dorm rooms and classrooms between semesters and during summer semester. YMCA/YWCA/Boy Scouts/Girl Scouts all run camps. Also camps like Outward Bound. Darn, looks like their only US facility with lots of lodging is in northern MN by the Boundary Waters. Not all church camps are for kids only. I know the church I went to in Maryland owned and ran a camp that also had teen and adult programs too. Their bunks were adult sized. Maybe there are ones in the North West. I did a quick google check of Lutheran ones and found a few with facilities for adults. I thought the USDA Forest Service had a training facility out your way. Now I only see the one in West Virginia. Executive retreats is another possibility, but cost may be too high.

Morning Nick!
Camp: Holden Village, accessed from Lake Chelan.
You know of Tall Timber, yes a church camp, by Lake Wenatchee. There's a Y camp on Lake Wenatchee also.

With some donations and some government funding I bet you could choose any location you want to build your school of rock.
There are probably a few places in Montana that would fit the bill. I live in Helena. I'll ask som e friends...
