  • Just got a Masterbuilt Gravity Series 800 grill/smoker. This is my second cook on it and I'm doing Pork Back Ribs. I'll give you the secret to a killer rub and show you how to make perfect ribs...easiest thing you can smoke that will impress your guests!!

    I picked up an 800 early spring. I love this thing. Some of the mods that are a must are the damper at the back - especially on windy days. And the full racks for the middle and top. I like to cook them meat down in the foil. And I also like them falling off the bone. 2 hours in foil is a must lol.

      I just got a full set of LSS mods and will be posting a video soon, they work great! Rib doneness is all personal pref. I know a lot of people that like fall of the bone, I prefer a little pull to the bite! Cheers, thanks for watching!!

    When you wrap your ribs, lay them meat side down, on a thin layer of brown sugar, 5 pats of REAL butter, and some liquid honey. The do the same on the bone side & wrap. Place in the smoker meat side down for 2 hours, unwrap and put 'em back in the smoker meat side up. You won't be disappointed. Oh, I don't sauce. I've had my GS 800 since last July. I love it! Everything I've smoked has come out tasting great! I use Kingsford Cherrywood or Mesquite briquettes, with chunks of cherry or mesquite about every 4" in the charcoal hopper. Your ribs looked good!

    Got the 1050, I use is almost daylie, mostly just as a baking ofen to add some smokey flavour

    I looked for an 800 to the point of giving up. A couple of weeks ago Walmart had the 1050 on closeout for $499, so that is what I have. I still think the 800 would fit my needs as I do use an outdoor griddle a lot, but don't need the extra appliance.

    I have 2 offset smokers but I'm thinking about getting one of these for the simplicity of it. I use Mccormick grill mates sweet and smoky and Applewood and no sauce. They're always delicious and dont need sauce. Interesting choice with beer during wrapping.

    I been looking at these smokers from masterbuilt from the 560 -1050 and I think the 800 is that he better option with the hot plate extra . Great video can’t wait to treat the family to ribs like this here in the uk

    At the time to sauce the ribs, I cut them into 2 bone pieces. The meat seem to finish better and it add sauce on the meat edges.
    PS...I Love my Masterbuilt!!

    I think this beats treager bc its more versatile you can run it off various fuels and even a with out electricity by using a solar powered battery bank. I have access to unlimited super cheap coconut lump charcoal for a few cents a pound.

    You did a great job, but never saw the Traeger Grill comparison? Would've been nice, because I'm thinking about getting one of these and returning my Wood Pellet Grill.

      I had to take it down, I had a copyright issue I guess. Spoiler....the Traeger ribs were great but the MB ribs were better.

    Thinking of getting one of the gravity models, if you can't put the ribs on the bottom rack, then it needs a baffle plate installed. I don't think masterbuilt offers one but you're not the first person that's said you have to cook low n slow meats on the two upper racks

      You can definitely put ribs on the bottom rack. If I was doing 6-8 racks I would use all of the grates. But when I’m only doing 1 or 2 racks might as well use thermal dynamics to your advantage and keep the ribs as far away from the heat source as possible. If you’re looking at mods I’d suggest LSS mods, I have a great manifold cover and drip pan holder for my MB GS800 from them. Tell Luke you heard about it from me, you might get a discount! Cheers!!

    If you turn the knob to the temp it will stay on the temp.

      No, but you can check out LSS Mods, they make a drip pan holder and manifold cover. I've never had a problem with flare ups on my low and slow cooks on this grill. But if you go hot and fast you will get flare ups from the drippings.

    Where did you find it? I’ve been checking online and in stores for weeks. I have a gas grill, dual fuel and an electric smoker. I want to ditch them all for this one.

      I order it online from Walmart a couple months back. It showed up damaged so I had to wait about 6 weeks for replacement parts. But now it's 100% and working great! I'm sure the will release more soon, you just gotta keep shopping around!

    FInally found one and ordered it this morning! Cant wait... Love how everyone has their own rib recipe and I'm sure they are all great. For a steak is it viable to leave the griddle on there, smoke it at 225 and then sear on the griddle? or do you have to use the grates and then switch out to the griddle?

      Congrats! If it’s a very thick cut steak I like to reverse sear. Otherwise I grill on the grates at 500 with the lid open. You’re gonna love this grill :)

      I picked up most of the mods from LSS .. and a couple from klots (fan protector and coal sleeve)
      Point of failure fpr MB grav
      Fan wire on top .. fix remove/rotate fan
      (Coolerguys 120mm (120X120X38) High Airflow Waterproof IP67 12v Fan) if need replacement
      Safty buttons can bypass by simply taping clips together

      I'll post a video soon of the manifold cover and drip pan mods from LSS. Lately my biggest frustration has been the control panel. MB is sending me a new one, but I've seen quite a few people bypass it with a Fireboard. I would be about a $350 investment to go with the FB controller. I'm not quite sure I want to spend that much. Part of the greatness of this smoker was the price point along with the ease of use and the same flavor as an offset. My biggest critique for MB would be the lack of quality in their build. So, long answer for your short question is "yes", the mods are very helpful and worth it. I'll let you know how the new control panel they send me works out! Cheers!!!

    Question... I have seen several mods for these grills/smokers. Which mods do you have, if any and why did you choose those? If you dont have mods, why not? Yes... I know I am probably overthinking this....but.... lol

      Check out LSS mods...the manifold cover and drip pan holder is pretty cool. Prevents flare ups and makes cleaning really easy.

      For what you're paying, it's pretty good. It's not a high end expensive smoker so you need to understand you're not going to get high end expensive parts.

    Looks great! How were the ribs compared between the Traegar and MB Gravity Series 800? I just finished seasoning my MB Gravity Series 800 and my cousin has the Traegar. We're thinking of having a comparison cook sometime.

    My food on my Masterbuilt 560 doesn't smell good smoke and doesn't have a good taste could you helm me i use Kingsford briquets With the same charcoal on my hibachi it smell good ? and i use a propane torch to start the fire .

      I use kingsford or Jealous Devil briquettes and I mix in wood chunks every few inches of charcoal. I've never had a problem with that. You don't want thick billowing smoke when you cook. You want to see thin blue smoke. Warm up your grill a good 30-45 mins before you start your cook. I also add a wood chunk or two in the ash catcher. Good luck!

    I'm curious because I have read a lot of people with these grills complaining about the actual grill temp being way off from what the controller tells you. Have you used an independent grill temp reading from something like a Maverick to compare it? I have a pellet grill with a PID controller, and although it does keep a constant temperature, it's actually reading about 50 degrees less at grate level than the actual temp my Maverick gives me. I have learned to just compensate and rely on my Maverick to tell me what to set the controller to. For example, today I did a spatchcock chicken and wanted it at 350. I set the controller at 300 and I had a very steady 350 grill temp.

      I do in this video when I'm doing brisket...yes, I use my Inkbird to monitor temps but the MB 800 has been within 2-5 degrees every time. Pretty accurate. ua-cam.com/video/E-E6oBC-jLE/v-deo.html

      I’m torn between this and the char griller 980. I keep reading not so great reviews on the build quality of the 560 and 1050. I’m trying to find out if they improved with the 800? Also, there are tons of mods for the 560 to fix issues with the hopper and ash pan... have you experienced leakage from those areas?

      @@jackwebb5917 The quality is pretty shotty, if you take care of it and keep it clean you'll be fine but I don't see my MB 800 lasting more than a few years. But for the price I don't expect much more. Hopefully Weber gets into the gravity fed game

      I’m pretty consistent with temps in my 800 unless its really windy out. Then I’m getting more swing and I have to set it a bit hotter than I want to be cooking at.

      I don't make my own sauce anymore, there's so many good ones on the market. I love Killer Hogs BBQ Sauce and Sweet Baby Rays. It's in a pot in the video because I keep the sauce warm for basting the ribs. Yes, I keep the grill on the entire time. I always start with a full hopper so I don't ever need to add more fuel for ribs. A full hopper last about 10hours at 225.

    Hot much charcoal did you use for that cook? And how much more would you use if you used regular kingsford briquettes?

      I get about 10 hours out of a full hopper at 225f. This cook took about half the hopper

    How many pounds of fuel does it hold and how long does it last for a 225-250 cook?

      It holds about 10lbs of fuel, I get 8-10 hours at 225 before I need to add more fuel.

      @@bbqguy8752 Yikes! Just about as efficient/inefficient as a pellet pooper. Need to load up the racks to be worth while.

      @@hotskillet Yeah...I go through a little less than a 20 lb bag of Kingsford, which costs about $10 to smoke a full packer brisket. Still cheaper than a bag of pellets and less wood than I would use in my offset. It really all ends up being pretty similar. My Weber Summit Charcoal Grill seems to be the most efficient of all my grills.

      The middle rack allow for more airflow...whenever possible I try to keep low and slow meat as far from the heat source as possible. This grill is great for the price!

      I do my ribs low and slow at 225 and I do my chicken hot and fast at 425 so I'd do them separately. A lot of people like low and slow chicken, I feel like it dries it out and makes the skin to rubbery.

    Just bought a masterbill gravity series 800 finished assembling it and I went to do the 1st burn in my temperature control wouldn't get higher than a 115 but my grill thermometer on the lid went to high and it won't regulate the temp and the slides are out, just wondering if this happened to you on the burn in,have a idea what it cold be

      Do you hear the fan kicking on? It could be a lid switch or firebox switch preventing the fan from kicking on. I'd call MB customer service, they are pretty good

      @@biglos480_ a lot of people bypass or replace the switches with more durable ones...the plastic melts at high heats (over 550). It's never happened to me but I hear its pretty common

      I've never tried that. I do know people put full splits in it with charcoal poured around them. All wood chunks seems like it would get pretty expensive!

    Are the racks too close together to fit a brisket in there? Or are they removable?

      You can fit 2 briskets in both grills...one on each rack. I just do middle rack when I am only doing one to get more even air flow around it.

      Sure!
      1 cup Sweet Paprika
      1/2 cup brown sugar
      1/2 cup salt
      1/2 cup garlic powder
      1/2 cup pepper (less if you don't like a very peppery flavor, can go 1/4 cup)
      3 Tbs mild chili powder
      5 Tbs onion powder
      1 Tbs mustard powder
      1 Tbs cumin
      1/2 cup granulated honey (you can find this on amazon)

    What kind of gloves are you using?

      Just regular latex gloves, but I wear cut resistant gloves inside of them...protects me from the heat. I also have Ove Gloves, they are great for handling hot stuff.

    The Gravity series is total garbage. I've had my grill for 6 months and so far have had to dismantle and clean it, replace 2 switches & a cord and the computer will not update or connect to my phone. The fan will randomly quit working. I've had emails to and from the company and demanded phone calls. I've gotten exactly 3 cooks out of it and have been embarrassed with guests waiting on food. IT IS A PIECE OF GARBAGE!!! Don't buy it.

      That's such a bummer. I have heard similar complaints from other people but not often. I have had to replace my lid switches and my control panel but customer service was pretty great. I went through Facebook messenger, someone told me they respond faster through there. They definitely need to turn out a more durable product. It's such a great idea and awesome grill when it works right. The Traeger has been pretty flawless for me but it's also double the price. What grill are you going to replace it with?
