Hi. I'm Hainanese too - both my parents are Hainanese! You cooked the rice just the same way my mum cooked it - saute garlic, ginger and rice in chicken fats. Then add salt and broth to cook the rice!
Hi, my name is Chun Thung. both of my parents are Hainanese from Hainan Dao Providence of Jinhai (QIONGHAI). I HAVE ARRIVED FROM HONG HONG TO AMERICA NEW YORK CITY AT AGE TWO. I'M ABLE YO SPEAK HAINANESE QUITE WELL. I HAVE REMEMBER HOW MY PARENTS HAVE COOKED HAINAN CHICKEN AND RICE BALL, ALONG WITH HAINAN DIPPING SAUCE AND IT WAS SO VERY Delicious and tasty. I always enjoy watching your cooking show, I always wanted to learn and picking up new ideas. I was worked in a Cantonese Chinese Cuisine for thirdly years, I now retired at age 65.i Thank you greatly honoring your cooking show !!!
Kao mun gai is my favourite dish when I go to Thailand. In my favourite restaurant they serve it with fried chicken as well and it provides a whole different texture! SO GOOD 🤤.
There’s also Hainanese Chicken Rice in Singapore & Malaysia but we use different sauces on the chicken rice. Instead of a bean paste sauce, we eat it with a garlicky chilli sauce with some dark soy sauce. I’m Teochew and afaik many Thai Chinese (more than half of the Thai Chinese population) are also Teochew, Hainanese is not a very common dialect here in Singapore either but their cuisine has had a great influence on our culture all the same :)
My mom usually prepared this dish with warming the seasoned chicken part in the microwave, after the chicken was cooked, she poured the fat that came out of the chicken in the a cup of cooked rice and stirred well then it became an easy Khao Mun Kai for kids on the day we asked for something more special than the regular thai food. This is also an easy way and yummy way to cook it too. Thanks for sharing.
I made this recipe and it turned out amazing. I put a stainless steel steamer basket over the rice and put the chicken in it. It worked out perfect where you don’t get the mushy rice issue.
Thanks alot for sharing. I am also half hainanese! Was brought up by my maternal grandparents who are from Hainan. One thing I missed the most was my late grandmother's chicken rice n was a pity noone learned her recipe before she passed on ): I will try to cook this for my family.
Loved this dish when I was living in Thailand. It's a bit too salty so I don't salt the chicken and I substitute 1.5 Tbsp Healthy Boy Brand Sweet Soy Sauce for 1 Tbsp sugar then adjust the sweetness with a small amount of sugar and it's perfect. I also make 1.5 times the amount of sauce because I like it so much. Thank you Pailin.
My favorite Thai dish to eat when I go to Thailand!! I eat it everyday when I'm there because my Thai wife only makes it here once in awhile lol Thank you Pai for the fantastic videos 😊
I made this (not exact to the measurement because I’m lazy) and it was so easy and delicious!!! I skipped the ginger in the rice because I’m not fond of it but it worked just as great ❤️
Haha I'm Korean and I was quite surprised when you were putting 된장 which is exactly the same one with one in my refrigerator! Definitely will try this!
Same here lol I have pretty much every ingredients since she used 된장. Thank you so much for finding the substitution for this dish. Makes my life so much easier in cooking this 🙆🏻♀️🤗
This is not a Korean and Thai Chinese fussion dish. This is still a Thai Chinese dish but she gave the substitution for Thai Fermented Soybean paste to Korean Doenjang that resembles of this Thai Fermented Soybean paste to it.
@@erdyantodwinugrohozheng The one in her original recipe is actually not Thai fermented soybean, but a southern Chinese one. Southern China is where Thailand got a load of immigrants from. There is no soybean used at all in non-Chinese Thai cuisine.
@@cbunmingthis is actually wild for me to learn! As a Thai, my family uses lots of soybean paste in our cooking. Then again, we are Thai-Chinese lol. I guess I never separate my Chinese culture from my Thai culture. Tbh, without Chinese influences, we wouldn’t have the culture and cuisine that we do today☺️ It’s all so blended and well harmonized
Omg thank you! My mom never taught me how to cook all the authentic Thai recipes so when I’m craving something I come here! My mom used to cook this in a rice cooker. I’m sure you could also do it in a slow cooker!
A thai friend of mine posted a video of the more time consuming ‘traditional’ version of this recipe on her FB page about two years ago, in thai. I cook asian food fairly often, so i had a fair idea of the ingredients. I’ve cooked the ‘make broth from whole chicken and chunks of ginger and garlic and make the rice from that liquid’ version several times. I love the dish. Now i’ve invented a sort of abbreviated version that tastes great but the whole thing takes around a half hour start to finish, similar to what you’ve done here. I make it often and my kids are nuts about it. Your video is fun, thanks...
Thank you for the easier method, and for people stuck with boneless skinless chicken, a supermarket with a Kosher section or Amazon has chicken fat in jars though it does have a slight onion flavor most of the time but that works well with this dish.
I love making this version the chicken can be a little dry if you use a rice cooker though. Best thing? Next morning, Chop up the leftover chicken, add to the rice and simmer in the chicken soup to make an awesome Jok “congee”. Just add leftover hainan dipping sauce to taste in your bowl….waste not want not ❤❤❤
Pailin firstly as a Korean your pronunciation of "doenjang" is great. Another reason why I would use it over miso is that doenjang is much heartier and works well with stews vs the delicate miso. Also with miso soup you are supposed add the miso paste at the very end to preserve the good bacteria. If you used miso in this stew you would be killing off the probiotics.
Another fantastic dish. Time and life saver. It be awesome if you can make a quick and easy to make version of all kinds of Asian food. I'm pretty sure most people don't mind 70% flavours with only 40% effort or less effort.
Easy to follow and tasty! I made it as one pot dish because we like the toasted rice at the bottom. Pairs well with Nam Jim Hai Lam, the dipping sauce #2 from the longer Hainanese Chicken recipe. Next time I shall add white pepper.
Kao Mun Gai is something I can eat every day! I've been using my Instant Pot to make it quicker. I use all thighs because when my mom or Khun Yai made it old school, my sister and I would fight for the dark meat :)
Sawadee kha! I'm so glad I found your channel!! you can't imagine how happy I am, I lived in Thailand for a few months and I was the happiest girl in the world there. I really miss this beautiful country so much. Anyway, thank you for sharing your recipe now I can try to cook them and enjoy again these delicious flavorings!
Wow! I just made this today, and it was perfection. Thank you for this Hainanese Chicken recipe hack ... of sorts 🙂 I will be adding this to my repertoire. Thank you.
I make a Greek inspired chicken and rice dish with a similar technique. So much easier doing it this way, and the rice turns out so good with the chicken cooked on top! I'll be adding this to my repertoire!
I really like the variation, khao man gai saep, I found one in Bangkok, the seller said it mix with namtok seasoning. I haven't find the recipe yet, but that's one of my favorites
Hi Pailin. I’m so glad I cam across your channel tonight. I’ve already watch 10 of your videos tonight. Love your cooking and cooking techniques. And you’re so charismatic. Great effn channel!
Love from Korea Pailin! I am so happy that you used doenjang in that sauce it is just too hard to find tao jiyao in Korea. Good to know these tips. Thank you so much and i will definitely try this recipe.
I just cooked a Filipino dish that's somewhat similar, called arroz caldo ("rice broth")! I'm lazy and cheap so I skipped some of the more characteristic ingredients (safflower and green onions), but if yours turned out more porridge-like and you added fish sauce and onions with the ginger and garlic, it's loosely the same! I love learning about similarities between Asian dishes.
I ate this in Malaysia all the time... very similar, the dipping sauce was different, more red.... Interesting the Hainanese are all over South East Asia .
That is a nice looking dish and I may have eaten some of that at some of the parties I went to while in Thailand. I enjoyed the food they served at this one club where staff and customers of all the clubs in the area held their after hours gatherings.
That's how I make every other Khao Man Gai at home. :) By the first I make enough stock for the second therefore the second is a quick one. I'm from Hungary I definitely not wanna use local stock as it has very different flavor. We have cool asian stores so we have every ingredient necessary. I also use pandan and galangal in mine.
I just so excited to watch your new video every time. Just made your tamarind shrimp couple day a go and was amazing, love it! I just love making your recipes, waiting everyday for your new recipes! Great work Pailin! You’ve produced the best number ☝️ show ever! Thank you for sharing your passion and fulfill our lives with healthy delicious food recipes!
I'm with you. I'd rather have chicken thighs any day than chicken breast. But I'm willing to try it in this dish! Hope it tastes as good as the thighs-I think I'll do half and half to see. Thanks for another great recipe!
As the name state, it's not a thai dish but the sauce is very different from other country variant (singapore one is very good). It's sure that boiling a whole chicken is a bit long (and you have to cook rice with the chicken stock after that...). Once you have a sauce that you like, it's simply perfect.
Could you please make the fried version? The Khao mun gai tod? I've been trying to make this since forever but all the recipes are super complicated... Your recipes are always the best!
Finally I did it. I having it right know while I am writing this comment. Thank you so much love for showing the easy way to cook this Hainan chicken rice 😘😘😘😘. Big hug and love from your new fan 😉😉

hi Pailin! is there a way for me to make the chicken without the rice? thank you for this easy recipe!
The only fermented soy I could find was natto. Will that work or is that too fermented?
Hi. I'm Hainanese too - both my parents are Hainanese!
You cooked the rice just the same way my mum cooked it - saute garlic, ginger and rice in chicken fats. Then add salt and broth to cook the rice!

It would be cool to feature a few more Hainanese dishes that you know from your grandmother.
Thanks for sharing this masterpiece with us Jesus bless you!

Khao mun gai has to be my most favourite Thai rice-based dish of all time. Thank you for sharing.
just back from food heaven Thailand. Nothing beats thai food culture and you are a great teacher in every way.. kap koen kap 🙏
It's spelled Khap Khun Khap... 😅
This is genius! So much easier than boiling the chicken first and then making the rice second.
One dish i could eat almost each day.. love the cucumber and spring onions
I love Hainanese Chicken rice, too....sprinkles of sesame oil will even enhance the flavor and fragrance of the dish
Khao Mun Khai one of my favorite Thai dishes. Thank you for showing a shortcut way of doing it. 🤓

Just made this. Was amazing with almost no work at all. Got the soy bean sauce off Amazon. That sauce is gold. Rice is amazing. Thank you
my mom used to cook ข้าวมันไก่สูตรง่าย so often when i was still in school. I always devoured it. Could eat it for weeks.
