Sounds good! I'd also dress it up like a taco. Cheese, corn, salsa, & sour cream. Would Wal-Mart also sell this? I don't have a Sam's Club close to me.
This looks like a good easy meal start… I would think that 2lbs would feed 4-5 people??? It would be nice on top of a salad if you were watching carbs…

Once again Kevin you taste test something I was considering buying. I plan on using these for traditional Mexican street tacos. Two corn tortillas (makes them stable and also more filling), chopped cilantro, and onion with a squeeze of lime...perfection. Thanks for another great review.

That would be really good with some of that Trader Joe's Roasted Mexican Corn you had a while back..... put both in the tortillas. 😋
