Hey Grant. I have worked for 5 years a jewel caster, we used a similar pump! To make sure no air bubbles become trapped under your casting you might need something to vibrate the whole contraption, a vibrating plate of sorts

You can also get better castings if you put the de-waxed mold (which would be in a metal flask) in a vacuum as well. Use an investment that is made for that. Plaster isn't the best. The investment is porous, so the vacuum will pull the metal into the mold better. There are lots of videos explaining this. You already have the vacuum pump, the flasks are not that expensive. All you need to do is build a vacuum chamber for the flasks. A proper burnout oven would also help. There's an idea for your next build video.
Put a glass of water inside of it. Because of the vacuum, the water will start to 'cook'. And when you let the air back in, the steam will turn instantly into water,
Hey Grant, I noticed that when you were tightening the fittings with the slip joint pliers that the jaws were gripping the work surface the wrong way. In the position that you were using them the jaws would slip if enough tension was not forced on the handles. If you flip the tool around the jaws will grip tighter with less effort and be less likely to cause damage.
Add a muffler to the ball valve that releases the pressure. Get one with 1/4" male NPT threads. It costs about $5 online. This will make it quieter when the air is rleased back in, and prevents dust, fingers, and objects from getting sucked into the chamber, causing damage or personal injury. Also, try using black iron nipples and a black iron cross. Black iron fittings are stronger and cheaper.
It would probably explode. The nitrogen would all turn into a gas and expand very rapidly. If it has penetrated the surface of the aluminum it would throw molten aluminum everywhere. You can imagine how dangerous that would be. Then again it might all just sit on top.
seal is still probably not great, also the putty looks like it would wear easy. You can get rtv liquid gasket and make a proper oring seal, I'd make a groove in the acrylic and adfix rtv to it. that way it has to make a perfect seal at vacuum pressure. as it air can't get passed the acrylic as it's affixed to the gasket and the gasket seals around the rim and has pressure applied to it.
For the seal it probably would have been easier to just heat up the pot, and melt a groove on the acrylic cover. Then you can just line the bottom of the groove with a bit of silicone sealant and let it cure, or even simple dry lubricant like Jig-A-Loo . Then you can just drop the lid on the pot and get a perfect seal every time.

Put another inlet on it to run to another hose and you can use that for vacuum bagging and resin infusion with no worries of the resin ruining excess tubing or your pump.
Use refrigeration hoses to make sure the hoses won't collapse on you. You can also use a micrometer (very accurate vacuum gauge) instead of that vacuum gauge.
For the gasket, if you add silicone oil (either the pure stuff from hobby shops, or you could try Dot 5 brake fluid) to proto-putty you get this weird gummy stuff, that's frankly disgusting but works quite well for sealing stuff. It ends up in a kind of half-cured state; my theory is the way that construction caulking is chemically modified to not give off hydrochloric acid vapors makes it incompatible with "normal" silicone, and messes up the chemistry.
Great job! you may find it cheaper to use silicone caulk for your gasket and fittings. Just use a little petroleum jelly to keep the gasket from sticking to the flat form used.
Use a pressure cooker pot from a garage sale. Or glass canning jars work with that same pump. The same acrylic 3/4 but 12x12 $25. Been using mine for 5 years. Less than $50.

You need to use a thicker pot. Cody from Cody's Lab has an instructional video over it, he uses his vaccum pot quite often.
