Here in the south of France we keep the cheese in its wooden box, wrap it with aluminium foil and put in the bbq for a good 20 minutes. Then everyone dip in it, it's amazing ! There is also a cheese called "Mont d'Or" that we usually do in the winter, either in the fireplace or in the oven !

I have to try this recipe, I usually bake that cheese in the oven, here in Portugal they come in this wooden plate, and you remove all the plastic, put it back in the wooden plate, cut off the center white top part and drizzle with olive oil, fresh pepper, garlic, and herbs. And then bake it in the oven until googy. Its a really great recipe to eat with soup.
This is like something in a movie where the fancy chef tries to prepare some comfort food for the new kid who doesn't come from a wealthy background and totally misunderstands what he means by "grilled cheese".
If you liked this recipe, you should try the Spanish cheese "Torta del Casar", a cheese much more tasty than Brie and also it doesn't need to be grilled, it is always soft inside and you can eat it spreading on a piece of bread, just like he does in this recipe with Brie
My husband and I do this with brie cheese as well -- we just put in in the oven to get it melted. Then on the toast, on top of the melted cheese, we add a dollop of jalapeno jelly... SO GOOD! The sweetness and kick of the jelly goes so well with the creamy brie! We will definitely try this version, too! :o)

I have watched at least 10 of your videos today and from what I can tell you are always very concise in your speaking, you explain ingredients, and you always make me want to make your food with your explanations (which is a great thing to do as a chef!). My advice, you should audition for Food Network's "The Next Food Network Star". You could definitely win!! You're awesome!! =D
Adding fresh herbs to the oil for the croutons was such a good idea !! :) I usually put dried herbs for this but I definitely have to try with fresh ones ! :) I'm imagining this "sauce" on a bruschetta ... hmmhh !!!

It reminds of what we call here, in France, "la fondue du pauvre" (the poor man's fondue). Simple as this : we throw a well-done camembert in the oven, and cut some croutons from dried bread. When the cheese is ready, we cut the top part and dig in ! You can be fancy and put your croutons on a fork, or be a badass and go directly with bigger pieces of bread. There are some alternatives : you can put honey or some " herbes de provence" on top, it perfumes the cheese while it cooks. And voila ! :D
I am thoroughly enjoy these new videos utilizing the grill. :D Is there something I can do outside, that doesn't need home cooking. or perhaps a method to prepare before heading out to a picnic bbq.
I would love to see you try to recreate a Cronut! A mix between a croissant and a donut. Or even just a croissant recipe would be great! I love this take on a grilled cheese :)

The best grilled cheese I've had is ham & Brie with Dijon and tomato slices. It's lovely on sourdough!

Looks awesome! Have you ever tried Panela Cheese grilled?, it is absolutely great too! You can even grill medium/thin slices and it is delicious!
