I lived a couple of hundred metres from youe villa for about 2 years during the plandemic. I'd ride in to Hoi An and the streets would be deserted, only a few vendors and locals.
Vietnam is not only for shopping but nice tourist places. I think your character and style will blend in very well if you visit the Philippines too as the people there are more friendly and speak English very well..

So you need to take into account that your 1 meal worth a whole day's salary of a *high* end paying waiter in Vietnam. My point is that it was not cheap, it's the *MOST* expensive meal in the world, respect to what workers earn in Vietnam.
That meal alone was more than enough for the owner to pay the waiter, his salary/day. You got a point, and what I like to say is if it was the local people, they would charge them maximum half of what they've charge you, MAX. In the western countries like America, Canada, Italy ..... they don't double charge foreign tourists, NEVER.
