Whenever I play the US in vanilla I always leave Mexico New Mexico and when I’m at the point of no longer caring about infamy you can just declare war for the core over and over again bypassing the peace treaty allowing you take more states from Mexico, and as long as you leave New Mexico (or whatever state you leave them) for last you can easily take over all of Mexico in a short amount of time.
I’ve never been able to pull off a successful CSA playthrough. I always forget how so damn good this game is. I watch a video and reinstall it, but never play it and up uninstalling
