  • Sambar,also pronounced saambaar, is a spicy vegetable curry or stew cooked with a tamarind broth and an important dish for any Sadya. It is a very popular dish of South India. According to food historian K. T. Achaya, the earliest extant mention of Sambar in literature can be dated to the 17th century. Main ingredients of Sambar are the vegetables like Potato,Tomato,Pumpkin,Ladies finger,Drumstick and Toor dal ,tamarind pulp, Corriander, turmeric, salt, and asafoetida and coconut,curry leaves.
    Sambar is reflective of a broad and ancient tradition of lentil-based vegetable stews in southern India. In regions that grow coconuts, notably some areas of Kerala, coastal Karnataka and Tamil Nadu, Sambar is made with a paste of fresh, grated and roasted coconuts and spices.
    Sambar is usually served with steamed rice or break fast items like Idly,Dosa etc.. It is one of the main courses of both formal and everyday south Indian cuisine.
    Here Padmini Antharjanam shares this unique cuisine in her traditional style of preparation instead of adding ready made Sambar powder.
    SAMBAR
    INGREDIENTS:
    Muringakkaya/Drumstick - 2
    Tomato - 3
    Okra /Ladies finger - 6
    Brinjal/Vazhuthinanga - 3
    Small onion 150 gms/Big Onion - 3
    Kovaykka/Ivy gourd - 4
    (Vegetables like Pumpkin,Wax gourd,Shallot onion etc also can be added)
    Coconut - 3 teaspoon
    Toor dal cooked - 150 gms
    Tamarind - a goosebery size
    Jaggery - a gooseberry size
    Mustard seeds- 1 teaspoon
    Salt - as needed
    Turmeric powder - ½ teaspoon
    Corriander - 6 teaspoon
    Red chilly - 6
    Fenugreek - ½ teaspoon
    Asefoetida - ½ teaspoon
    Curry leaves - 6 sprigs
    Corriander leaves - 3 plants
    Slashed Green chilly - 2

    What can be cooked and what should not be cooked, I hear only liquid items be cooked in it. Also, how do you maintain it. Thanks

      If you like this recipe we are happy. You can reduce Tamarind and Toor Dal and it give another taste. Toor dal 100 gms is enough,try it please for the second time

      I checked it in my Mobile but it is not bad, Amma's mic had low problem but we couldnt do anything because the video out was came out with mixed tracks. So please adjust with this.
