    Thanks a lot for sharing the recipe. That looks great I am wondering if i can use fresh active yeast instead and will that help to shorten the whole process?
    Whenever i watch your recipes i wonder if one could directly buy these products from you. It would be great if one could directly order the seen item and You could then make it ready and ship.

      Yes you can use yeast but the purpose of sourdough baking is different. Sourdough breads are healthier and nutrients are more easily digestible. It should take at-least 6-12 hours then only it will become more healthy.
      I live in Europe and unfortunately thats not an option for me but I do take dietary consultations online.

      One of the reasons could be your sourdough starter was not strong enough or due to over fermentation

    I tried the bread - it rose so well in the fridge fermentation but when i removed it from the container to put it in the oven it flattened while baking. Any particular reason this happened? My starter was floating in water so i assumed its strong!

      Did you followed exactly same measurements?
      This could be too much water and flour didn’t absorb much. Or over fermentation can make the bread flat.

    While making starter do we go on discarding the rest of the starters after taking out 20gm on day 3

      Yes
      Otherwise it will be a lot to handle. Always feed it with 1:1:1 ratio until it’s ready.

    Can I substitute foxtail millet with pearl millet?

      Pearl millet needs more moisture and fat otherwise it will be dry. Add about 3 tbsp oil and 1/4 cup extra water.

    Where can I buy foxtail millet flour in US? Brand name please?

      You can get whole foxtail millet in Asian grocery stores and then you can make your own flour. Or try buying foxtail
      Millet flour online.

    I tried the starter recipe.On the first day there were just 2 holes and no bubbles but on the second day there was fungus and growth of bad yeast.What could have possibly gone wrong?

      @@ABHINAV-502 If you're following the exact proportions and method then it shouldn't happen. After baking, switch off the oven and leave the bread in oven for another 10-12 minutes. Then allow bread to cool down completely before cutting.

      I never tried freezing because I use it weekly. I think freezing will make it slow and you can feed it a couple of times to activate it
