Hi one of my favourite Thai dishes. I like to mix the mint leaves with fresh coriander leaves too. I also like my steak cooked a little more rare and sliced thinner. I could eat some now..... starving!
I'm with you about more rare beef. I've almost got my wife converted. She loves the flavor of medium-rare but hates the "blood". I hat this recipe at a friend's restaurant here in NOLA. The cook has only been here for about a year and she grew up in a family of little hole in the wall restaurants that you seem to frequent so often. I LOVE the texture that rice makes. While I loved the flavor, I can't imaging liking it as much as WITH the rice. Btw, did you get any tips/tricks about how to make the gaeng hunglay from Mae Hae? It looked like it was amazing even by your standards and I'd love to see a video about it.

I actually made Nam Tok Pork, just using pork chops cooked on a cast iron grill... it still tasted great. I wish I had a charcoal grill.

Great thing with this dish is that you can use a cheap cut like skirt steak and get the same results as you would with an expensive cut like ribeye.
