    MEALS WE ARE MAKING THIS WEEK FROM OUR ALDI HAUL
    Chia Pudding with Fresh Fruits and Avocado Toast
    Homemade Pizza with Fun Toppings
    Chicken Fajitas
    Handful of Mixed Nuts
    Mini Oranges for Snacking
    Omelets with Avacado and Fresh Fruit
    Unstuffed Bell Peppers with Cauliflower Rice
    Meatballs with Mediterranean Salad
    Chocolate Avocado Pudding with Blueberries
    Eggs in a Basket with Avocado, Tomaotos, and Fresh Fruit
    Mini Cucumbers for snacking
    Low Carb Mixed Berry Muffins
    To-Go Veggie Sandwiches with Fruit
    ✨Low Carb Unstuffed Pepper Casserole✨
    Olive Oil or Ghee Butter
    5 Peppers, Diced
    1 Yellow Onion, Diced
    10 Garlic Cloves, Minced
    Italian Seasoning
    Chili Powder
    Paprika
    Chives
    Salt & Pepper
    2 Pounds of Ground Beef (Drain your meat)
    1 Pound of Ground Lamb (Drain your meat)
    3.5 Jars of Marinara Sauce
    3 Bags (12 ounces each) of Cauliflower Rice
    Cheese
    Let's Make This a 30 Minute Meal -
    Step 1. Brown up your ground beef, lamb, diced onion, minced garlic, and seasonings. If not using it immediately, save it for the day you make this dish.
    Step 2. Dice your peppers on prep day and save until ready to use.
    Step 3. You can pre-measure all your spices and jar them up until ready to use, triple the amount, and save the rest for later.
    When you are ready to make dinner, follow these steps.
    Step 1. Oil your iron skillet, and add ground beef, lamb, onion, minced garlic, and spices. You will start from scratch and brown up everything or warm up what you made beforehand.
    Step 2. Once your meat is cooked and browned, go ahead and add your peppers, marinara sauce, water (if needed), and your Cauliflower Rice
    Step 3. Cook until you are happy with the pepper texture. I leave mine about half-cooked because the oven takes care of the rest.
    Step 4. Sprinkle cheese over the top of the unstuffed peppers (use whatever cheese you love) and bake in an oven at 400 degrees until your cheese is melted. You can also broil the top and get a beautiful crisp cheese! So good!
