Unstuffed Bell Peppers with Cauliflower Rice
Meatballs with Mediterranean Salad
Chocolate Avocado Pudding with Blueberries
Eggs in a Basket with Avocado, Tomaotos, and Fresh Fruit
Mini Cucumbers for snacking
Low Carb Mixed Berry Muffins
To-Go Veggie Sandwiches with Fruit
✨Low Carb Unstuffed Pepper Casserole✨
Olive Oil or Ghee Butter
5 Peppers, Diced
1 Yellow Onion, Diced
10 Garlic Cloves, Minced
Italian Seasoning
Chili Powder
Paprika
Chives
Salt & Pepper
2 Pounds of Ground Beef (Drain your meat)
1 Pound of Ground Lamb (Drain your meat)
3.5 Jars of Marinara Sauce
3 Bags (12 ounces each) of Cauliflower Rice
Cheese
Let's Make This a 30 Minute Meal -
Step 1. Brown up your ground beef, lamb, diced onion, minced garlic, and seasonings. If not using it immediately, save it for the day you make this dish.
Step 2. Dice your peppers on prep day and save until ready to use.
Step 3. You can pre-measure all your spices and jar them up until ready to use, triple the amount, and save the rest for later.
When you are ready to make dinner, follow these steps.
Step 1. Oil your iron skillet, and add ground beef, lamb, onion, minced garlic, and spices. You will start from scratch and brown up everything or warm up what you made beforehand.
Step 2. Once your meat is cooked and browned, go ahead and add your peppers, marinara sauce, water (if needed), and your Cauliflower Rice
Step 3. Cook until you are happy with the pepper texture. I leave mine about half-cooked because the oven takes care of the rest.
Step 4. Sprinkle cheese over the top of the unstuffed peppers (use whatever cheese you love) and bake in an oven at 400 degrees until your cheese is melted. You can also broil the top and get a beautiful crisp cheese! So good!

You really know how to cook healthy food. Plus you know what’s on labels. I’ve to World Series baseball games in NY and Boston, and a Stanley Cup hockey game in Boston, but never been to an Aldi.😢 Not one near me in Florida.

🫐Blueberry Keto Fat Bomb Bites:
5 oz Cream Cheese
3 Tbsp Butter or Coconut Oil
3 Tbsp Sweetener (Maple Syrup, Honey)
1/2 Tbsp Blueberries
1 tsp Vanilla
🫐 1) In a small saucepan, melt the butter or coconut oil over low heat.
🫐 2) Once melted, remove from heat and pour into a medium-sized bowl. Add the frozen blueberries, sweetener, and vanilla extract, and mix until everything is well combined.
🫐 3) Pour the mixture into silicone molds or an ice cube tray.
🫐 4) Place the molds or tray in the freezer and let the fat bombs set for at least 1-2 hours, or until firm.
🫐 5) Once firm, pop the fat bombs out of the molds and store them in an airtight container in the freezer until ready to enjoy.

I used to be a Kombucha addict and that was my go-to brand, but now, I have really bad GERD, and I've been afraid to drink it because it's on the carbonated side and I don't want an acid episode, lol. I'm already sleeping sitting up.
I get the baby food pouches from Aldi for my 1,2 and 5 yr old. They love them. They dont like veggies so its a good way of getting them to eat veggies. Sometimes my 13 yr old wil eat them too. Also, i found stone ground mustard at aldi. Very clean ingredients. ❤

I noticed that yesterday at Aldi. I thought it was just because we shopped around 5:30. A few items on my list were not in stock at all so I had to adjust my menu.

My two and five year old love those Aldi Baby food pouches. They are a staple snack in my house. I buy several a week. The mango and Kale, mixed Berry with flaxseed, pear and spinach varieties, yogurt ones and apple with purple carrot are some of their favorites.

Easy Blueberry Lemon Muffins
1 1/4 cup of almond flour
1/2 cup coconut flour
1 teaspoon baking powder
1 tablespoon maple syrup (you can use sweetener of choice)
1/2 cup grass-fed butter (melted)
1/2 cup grass-fed milk
4 Eggs (we used organic and pastured raised )
1 teaspoon of vanilla extract
1/2 teaspoon of lemon zest
1 cup blueberries (fresh or frozen)
1. Preheat your oven to 350 degrees and line a muffin tin with muffin liners.
2. In a large bowl, add all the muffin ingredients (except the blueberries) and mix your batter well
3. Add your blueberries to the batter and gently fold them in. Some of the blueberries will break, but that's okay!
4. Fill your muffin liners up about 3/4 of the way. (You could also make lots of mini muffins!)
5. If you wish, add some extra blueberries to the top of your muffin batter. Just be sure to press the blueberries down a little.
6. Bake your muffins for about 20 minutes or until golden and firm to the touch (it could take a little longer; it depends on your oven and altitude.
7. Allow your blueberry and lemon muffins to cool on a rack before serving. We added some grass-fed butter and honey to ours. YUMMY!!
