If you are shooting negative film, there is no such thing as "unedited" image. Every inversion of the image is an edit, so while you may not be doing any extra editing after receiving the scans from your lab, the lab scanner is certainly applying its interpretation to the negative.
My favourite black and white film is XP2. It's fine grain, a good speed and it's a C41 process.
