I use local farm eggs and NEVER do the one-handed crack directly into food. I have seen green eggs--something the chicken ate--and black eggs!!--a fungal attack. I bet you could cook them before set yolks if you knew the eggs were to be eaten on a plate with utensils. Also, I am so glad that Linda for Easy Cooking sent me to your channel. You have great recipes and I love your approach to cooking. It is always enjoyable to watch you, not just educational.

Are you spying on me? 😄 I made this last night! I don't have a muffin tin so I used a ramekin that I buttered and lined with black forest ham. I was serving this on an English muffin so I took it out when the yolk was still a bit runny. This would be good with just about any ham.
😆 I've been making this for years. I've always used a muffin tin. I never thought of using a ramekin. I'll have to try that, and maybe come up with some new ideas. I love that you have it over an English muffin for the runny egg. Kind of a play on Eggs Benedict. Hmm, now that I say that... I'll give you credit.

When we tried with a scambled egg, the egg was overdone before the ham got any crispness 🥂🍸
