German Chocolate Swiss Roll Cake

This German Chocolate Cake Roll is a twist on the typical German Chocolate cake! A chocolate swiss roll genoise cake is filled with coconut pecan filling and the whole thing is topped with rich chocolate ganache and toasted coconut.

For the Cake
4 eggs large
1/2 cup granulated or caster sugar
1 tsp vanilla extract
2/3 cup all-purpose flour
1/4 cup cocoa powder
1 tsp baking powder
1/4 tsp salt
For the Filling
1/2 cup pecans toasted and chopped
3/4 cups brown sugar
4 egg yolks large
8 oz evaporated milk
6 tbsp butter unsalted, softened
1 1/2 cup shredded coconut toasted
1 tsp vanilla extract
For the Ganache
8 oz dark chocolate 70%, finely chopped
8 oz heavy cream
1 tbsp butter softened
1/2 cup shredded coconut toasted, for decoration
