Just a friendly tip to save some money. Since the brisket doesn't take on more smoke while wrapped, I finish mine in the oven. Those pellets can get expensive.

Great video and cook. I just got a Bullseye and have been looking at the various videos about them. I just have to comment on your Shirley! I have one too. One of Paul's first smaller reverse flows, I had some special needs and he took care of it! He built it for me several years ago. Actually I run a charity BBQ for Vets and the homeless. he found out about that and built me a smoker and donated it to my efforts! I had never met him. What a great guy!! Hope you enjoy yours, i am sure you will!!!

I have a WSM 18.5 and Bullseye like you. I see you have a PK grill too. How do you like that one? For Brisket I have been liking a Coffee rub lately. It's basically salt and pepper, except sub ground coffee for half of the pepper by volume, and then add a little bit of ground cumin and red pepper. Like salt and pepper but with a bit more to it without being complicated or ruining the flavor of the meat. Wreck 'em
I loved the PK grill but recently sold it for a Kamado Joe. The only thing I didn’t like on the pk was the lack of an ash catcher. Yeah coffee and brisket pair well very well together. Thank you for watching!
@@mikebowerstv Salt Lick is what I use too. If I'm in the area it's a must go stop lol. Mike I don't get the changing temperatures on the brisket but we all have different ways to cook one. I have found that on my Rec Teq 700 Bull and the Bullseye that smoking at 225 until the internal temp gets to 203, spritzing as you do but I use apple juice and Pitt Boss competition blend pellets, that the brisket is always just perfect. Where in Texxas are you?
I only do this on pellet grills. Start low to get a thicker smoke profile then finish at 225. Just gives a little more smoke since pellet grills are typically lighter than charcoal or stick burners. Thanks for watching.

The Bullseye has a “low” setting and cooks around 200 degrees. I cook on that for at least 4 hours before bumping up the temps. I also don’t wrap until I have the color I want even if that means I dont wrap. Thanks for watching.
New to pellets smokers but I did a pork butt and everyone said to do fat side down I went the other way and hands down the best pork butt ever... also I was wondering should you season a brisket and let it set in the fridge over night??? As I said im new to all this

@@stevenalbert6178 you can for sure cook fat side up but in a pellet grill I would put in a water pan under the grate to protect the meat from the heat.

Did your disposable pan under the brisket get burnt and leave an odor or did it stick to the heat deflector? I’m curious if you cooked 2 briskets at once with 2 pans underneath if there would be enough airflow...do you have thoughts on that setup?
Never had a problem with the disposable pans getting too hot. I cook low and slow and fill them with water. Two briskets would be a very tight fit but even then I would only use a one pan.

Lumberjack Pellets. I took a 20 lb bag of oak, pecan, mesquite and cherry (for color) and mixed them in a giant tub. I use this blend for everything currently.
So when I cook burgers I normally grill around the edges. The grease drains under the deflector and flares up but is usually blocked by the deflector. If you grill in the center you can get a grease fire. I’ll try to do a video soon.
I heard you mention that your daughter was fighting cancer. I’m so sorry to hear and hope that she’s still doing well. I would encourage you to research the carnivore diet. There are quite a few doctors on UA-cam that go into a lot of detail regarding health benefits of this diet. Great video and may God bless you and your entire family.
here in Lubbock with a 300 pound Pit Boss Kamado , do you think I can obtain the same cook or better with 380 RECTEC I am very close to pushing the button on one. 2 questions where did you buy the grate and do they make a thermal blanket for long slow cooks that will fit it.
This particular brisket was about 12 lbs. the cooking grate on the Bullseye is 22” so there is plenty of room for almost any brisket you will find. I cooked on a 22” UDS for years and never once had a brisket that wouldn’t fit. Thanks for watching!

Hello Bowers. Bought the Bullseye recommended by my brother, also a bbq star like yourself. Love the opening logo!!! Question. What is your auger set at? I think we got a lemon 🍋. It happens… been trying to make adjustments… units fan did not work on first turn on, had to watch a video and disassembled to unplug and replug the fan unit. So much smoke!! Like so much. Customer Service first fix idea no good, switched to auger adjustments. Still not performing, tried several auger speeds, curious what yours is set at? Will take any help we can get 😊
I’m a family of three and the Bullseye is more than enough for me. When I had the 680 I never came close to filling it up. I will say the other models are more well built than the Bullseye but they don’t grill as well as the Bullseye. For 1/3 of the price of a Bull you can’t go wrong with the Bullseye IMO.
With the water pan underneath, did it seem to catch the juice from the brisket? Or did you have a mess to clean up after the cook? Also, congrats on your daughter being cancer free for 2 years!

Congrats on picking a Recteq, but for pete's sake get a real smoker like the 700. The bullseye is a grill. With that said best line of smokers and grills for the money and the quality of your brisket shows the quality of Recteq. Nice job on not squeezing the finished product.
Haha! I sold my 680 for the Bullseye. The Bullseye is awesome for smoking and grilling. As for “real smokers” checkout my other videos as I have a stick burner.

If you flip the deflector so lip is facing down it will make low and slow cooks more indirect as it blocks airflow that way.

The sns is 22 inches right? I would test the fit on that! I don’t think you will have air flow problems.

Bowers Backyard BBQ sounds good! I bought a 40lb bag of Cookin Pellets Perfect mix per Rec Tex’s recommendation. So far so good.

Good vid and that brisket looks great. My wife just surprised me with this grill. Any tips for smoking that I should know as a rookie?
On a pellet grill start on the low setting for a few hours then bump up to desired cooking temp. Takes a little longer but a little better flavor.
Do you have to add water to the pan after the original fill?
I did not. I normally fill up to what I think will last a cook and more often than not that’s plenty.

Yeah this grill is awesome! They do not make a blanket for it at this time. As for the grate check out my affiliate links in my latest video.

Matt Brennecke grease burns off similar to a gas grill. About every 4 cooks I scrape the deflector plate and vacuum out the ash.

When you poke through the foil with the probe, are you not afraid of sending tiny parts of aluminum into the meat?
