My best memory of visiting my family in the Islands is my uncles preparing an umu. I swear pork cooked this way is the best in the world - and thats compared to Michelin restaurants I've visited around Europe.
Love the Umu tradition, esencial part of our heritage as Maohi people.
Skills and ingenuity like this are what made the Polynesians the great navigators of the world. I dream one day of tasting palusami. Coconut is my favourite fruit and vegetable.

The only difference from the umu we do in the States is we use wet newspapers to cover so no heat/steam escape.

Growing up with my grandpa he was a really harsh man about doing a umu the right way a lot of Samoans start the umu by laying the woods down but my grandfather hated that method because the rocks won’t be heated enough so he prefers standing the fire woods up and build around it and the umu will be as aasa as hell he says 😂 I believed it cos I did it and it works and that’s how my dad does it too

I was taught a totally different way. I'm Samoan and I help my young brothers do the cooking.
Rima Dawson yep it's part of our culture, men cook the food serve the food in the house, the elders parents and he's sisters eat first, men goes fishing, hunting, coconut climbing, men's also does the plantation and the art of Tattooing!**
