I'm a young woman who's been cooking her entire life, as well as baking, and am just now getting into edible goodness and your videos help me so much with things I didn't know yet. I had NO idea wooden spoons could add water to your chocolate and as soon as I heard that, my brain flashed through at least 20 memories of seized chocolate....with a wooden spoon in my hand.....sigh and facepalm.....THANK YOU LIZ!

Thank you Queen! This is EXACTLY the tempering tutorial I've been missing my whole life! Nobody ever told me my failures were because ny house is way too hot! So today I made sure to use your Temps & including having my house at 70°. And it worked! Without swearing, trashing several batches, & no cheating by adding wax like my sister does! Thank you soooo soooo much!!!!

When I went to Australia and found out that chocolate-covered candied ginger (which I love!) is as common there as M&Ms are here, once I came home I bought a candy thermometer and taught myself how to temper chocolate, so I could dip chunks of candied ginger in chocolate. The fiddliest process I know except for making sourdough starter. But I'll look for inappropriate candy molds the next chance I get :-)

Hey there lady!!! Just wanted to let you know that cocoa butter itself has a very high burning point...Chocolate will burn at a very low temperature though. this is right from google...."What is the smoke point of cocoa butter?
Smoke Point The smoke point of cocoa butter comes in at 370 °F/ 187 °C, which is about the same as virgin coconut oil. This is relatively high for an unrefined fat, making it a great oil for baking and cooking in general." So you do not have to be careful with the cocoa butter itself. dark chocolate you can heat up hotter than milk, milk slightly hotter than white, no more than 110 for milk or white, and no warmer than 120 for the dark. i hope this makes life easier for ya!!!

@@DiamondDelightEdibles I decarbed my kief in coca butter at 240*F for 35 min on my lab hot plate. It didn't burn at all and made VERY powerful and tasty brownies. I watched this for tempering the chocolate, since you explain things well. I had to ask on a reliable forum about this specific point. You know how yours turned out and I know how mine turned out. LOL! I dunno!

Hi UA-cam hubby. Yes humidity plays a huge factor in drying. You can dry them in the fridge. It may take a couple days longer.

Latex gloves when making food products are a huge NO NO. Use nitrile gloves instead. Latex is a serious allergen for a large number of people.

Make sure you clean all the chocolate off of the marble before you let your dog back into the kitchen. Chocolate is very poisonous to cats and dogs. (I just watched a video about guinea pigs, and they put a drop of CBD oil on their ears, where the skin is very absorbent, to help them stay calm when they need medical treatments, and also as a painkiller for the little critters. But guinea pigs shouldn't eat chocolate either.)

yes, chocolate is lethal to some animals.... for dogs it's 1 oz per lb of dog's weight in consumption to start the lethal process... so the tiny tastings her pup will be privileged to, are simply a tasty treat in more ways than one ;)
