  • Have you heard of "The Cookies"? The internet famous salted chocolate chunk shortbread cookie from NYT Cooking & Bon Appetit's Alison Roman.     These are my FAVORITE COOKIES! My family insists I make these for every holiday, or whenever they want one! This past Christmas I made cookie boxes and sent them to everyone. Other than the macarons, these were the star of the show ❤️ I find these are the most dangerous things on the planet... they never last longer than a day.

    I don't think cold butter adds any value over RT butter. Except make it more difficult to cream. I also skipped the egg wash/demerara sugar, haha

    Fantastic! Really nuanced. Might venture and try this one on my NY Times cooking app. Don't remember where it appeared, but there's this choc chip cookie recipe floating around nyc (maybe Maman ?), with corn starch, bread flour and some chocolate liquor. ooh-la-la..Julia would have liked 'em!

    Great video! I just made the dough for these. Did it seem to you that Alison uses more butter in her video than the written recipe? It seemed that way comparing my dough to hers.

    Very impressive, I agree with the earlier comment about a Kitchenaid mixer. It would make your life much easier. Perhaps a few more Patreons and you can pick one up!

    I feel like such an idiot lol. I've started watching Jamie's channel a few months ago, but I haven't gotten too far into his older videos. This video came up and I was thinking to myself, why is Jamie cooking in a new kitchen? Is he doing a colab with Alison Roman in her kitchen?🤦‍♂

    the danger of raw cookie dough is more in the raw flour than the raw eggs. the raw eggs are probably safe, anyway.

    That looks like the perfect chocolate chip cookie for me; thanks! I love shortbread cookies because of the hardness and crunch and absolutely hate soft cookies. I'll be adding this to my recipe book.

    Any advice for cookies not falling apart when cutting? I chilled for two hours and then tried to cut with knife. The log was so hard as I tried my best to slice it broke it bits and I had to remold them into cookie shapes. They tasted great but didnt look it. Advice appreciated!

      Hmm, Mine were falling apart too, but luckily I got them to stick back together again.

    I make these cookies too. I go through everything you went though! My cookies look exactly like yours. Not like hers. I’ve made this recipe a bunch of times and my cookies always bake up exactly like yours. Never like hers. But they taste great!
    I’m not a fan of the salt in top. I don’t add it.

    They are not the best cookies on the net. Those would be Chocolate Coma Cookies with chocolate chips, chopped bittersweet chocolate, dried cherries, and toasted almond slivers.

      Personally whenever a recipe says you have to eat it a certain way, you should always try it the opposite way, if only just for science. Alison could totally be wrong about having to eat them room temperature, they might be way better warm and melted, you'll never know if you don't actually test it.

    295gms of flour Does that include the bowl it was in? Also you want to make the recipe but the recipe hinges on salted butter and you’re like annoyed that you’re not sure if your butter is salted or not. Sort your life out. On a lighter note I’ve made these as per the recipe and they’re delicious.
