The grainy Texture from brighter colours comes imo from the dryer brush as you loose a lot of moisture during your previous layers of drybrushing. I dip my brush in water just a bit and get it dry again the remaining water helps with great texture even on the top layer when you dry brush. At least this helps me.

Yea it is daunting, so I do it a small bit at a time and reassess the model as I go.
