1/4 Tsp Black Pepper

My husband is Filipino. I love cooking this for him. I like to fry up some sliced potatoes and then add them back to the chicken at the end. The potatoes just soak up all those flavors and spreads the meal out even more.
Hardest part about living with your mom as a Filipino, is dieting lol how the hell am I suppose to portion and eat the right amount when she be making happiness for my soul!
The best part is the leftover the next day. Somehow all the flavor are like 10x the next day.

My first time ever having plain white rice & adobo was my sophomore year in HS. My best friend is 1/4 Filipino & his Lola would make BUFFETs of food for us when we got home from school/practice. She’d get so mad if we didn’t finish all of it or if there was a lot of leftovers 😂. I still love that old lady with all of my heart! And no shoes in the house!

Every Filipino I know has their own version of pork or chicken adobo and it’s all good. It’s nearly impossible to screw this dish up. It’s undoubtedly the best chicken dish on the planet. It’s the National Dish of the Philippines.

Level up if you brown the meat with the spices before adding the soy and vinegar. And you were right, another level up if you do throw in boiled eggs. The sauce is way better with whole, toasted peppercorns -- ground pepper won't do. Awesome job, man!
Quang tran, Filipino gang heart you. Just a suggestion, next time partner it with boiled egg. Also, in my province Lipa City, Batangas, we also add potato with the Adobo. Marinate the pork or chicken with pineapple juice too. I promise you, it will be the best Adobo in the world. Good luck, more Filipino mukhbang and thank you for promoting Filipino food. Mabuhay ka!

Adobo is so versatile. You can add pineapples too if u want. But my favorite is, instead of soy sauce you put fish sauce, thats so good.

Pare! I don’t put any peppercorns on my adobo, always bite through them and get a firery shock. Lots of freshly crushed black pepper will do the trick.

My GF is Filipino, the vinegar you used is a dipping vinegar like you said but I don’t think it matters. That’s exactly the same vinegar we use for adobo. The datu puti spiced coconut vinegar I think they prefer though. We don’t toast the spices but I’m definitely going to try that next time I make adobo. Filipinos just throw it all in the pot an walk away lol.
