Ingredients:
2 portobello mushroom caps
1 cup walnuts soaked in hot water for 15-20 mins
3/4 cup Panko breadcrumbs
3/4 cups vegan Parmesan cheese
Red and green bell pepper chopped
Red onion chopped
1 tbsp Liquid Aminos
Black pepper
1/4 cup Sun-dried tomatoes
Olive oil
Drain water and place soaked walnuts Olive oil, red onion, bell peppers, sun-dried, tomatoes, liquid Aminos black pepper, olive oil, in food processor blend for 10 seconds be careful not to over process.
Remove inner stem from portobello mushrooms, wipe with wet paper towel to clean drizzle with olive oil. Use your hands to cover the mushrooms with oil. In a bowl place walnut mixture panko bread crumbs and Parmesan cheese, mix well to combine. Use a large spoon to stuff the mushrooms with the walnut meat mixture place stuffed mushrooms on a lined air fryer tray and air fry on 355 for 12 minutes or until the top has browned. Once mushrooms are nicely brown on top remove and drizzle with balsamic , glaze. Enjoy 😊

Oh and because I do not have a air fryer and I’m not a big fan of vegan cheese, but I am revisiting it. I just melted my cheese a little bit and I let it cool and edit it to the mixture and I have this little microwave pressure cooker thing that pressure cooker like browns, either way I had to microwave. I’m a traveler Hotel living so I might do what I have but thank you again so much and I would love to purchase that air fryer you have and I am when I do I will let you know.

Hello, when using walnuts as a meat dose, it matters if they have salt on them when you buy from the store. Or should the walnuts be plain.
