Potato Latkes:
2 1/2 lbs white potatoes, peeled (Russet, Idaho, etc.)
1 small yellow onion, peeledp
1/4 cup potato starch/cornstarch
1/2 tsp salt
1/2 tsp ground black pepper
2 cups matzo meal
lots of vegetable oil for frying

This is the ONLY latkes recipe I've ever seen where you don't have to press out all the water from the onion and potato - which is the part I absolutely hate! I like this recipe much better than mine. Def giving your version a whirl this week for Hanukkah! Chag Sameach!
They were great! This is the only recipe I've every tried, and it was pretty easy. Don't forget the horseradish dill sour cream! Totally worth it ;)

It's probably Charles Shaw! (Trader Joe's 2 buck chuck, lol)
If you squeeze the water from the shredded potatoes in a bowl, then let the water set, the starch separates and you can drain the water and add the starch to the latke batter, instead of using chemical starch. It binds and gives the final product a different texture. Your way works, as well; but, as a vegan i stay away from adding chemical starch, even though it may be vegan. I add grated garlic, salt and pepper and sometimes turmeric and paprika in the batter, and even jalapeños or red chiles for a kick. Not so traditional but tasty. thanks for using matzoh meal. Most youtube videographers use flour or bread crumbs. Feh.
I love all of those ideas! Do you just use all of the leftover starch--or is that too much? Adding jalapenos is definitely up my alley. Thanks for the tips!

You can't really go wrong with a fried potato!
Yes you can go wrong with a fried potato, by PEELING it...LOL I know you're just following the recipe, so all is forgiven. The angels still will cry, but they will get over it eventually. Another nice touch is to add some shredded horseradish to the shredded potato mixture. And put chives in your sour cream.. L'chaim!!!
Ooooh yeah, the horseradish sounds like a great addition, as well as the chives! Those poor angels...I should be in hell by now, lol.
I have almond flour, I'm going to make mine with that, a little healthier.

Isn’t olive oil vegetable oil? What kind of oil did you use?
I just used traditional vegetable oil in this recipe (not olive).
