And by tearing Serosh from himself, he returned to his true self, and was no longer a puppet of the Golden Order
The Rune of Death being unbound is actually a good thing. The Rune of Death is like the physical law of death and it was taken from the Elden Ring (all the laws of nature in this universe) so because it was taken, death no longer affects the world. People die and come back to life over and over and over (hence why the player respawns after every death) until they become insane and then eventually hollow husks of their former selves. So by bring the Rune of Death back into play, natural life can exist again.
If there's one thing to love about this universe, it's that the Grim Reaper himself loses out on being the penultimate fight before God... To just a naked guy throwing hands.

Some of the bosses dont have intro cutscenes but do have phase transition cutscenes. Thats why some of them are on when they are clearly injured in some way
So for Rennalla she pretty much went insane when her husband left her for god (which is actually himself but whatever) and the second phase is her daughter Ranni basically creating an illusion of her mother at full strength that’s why she says to spread far and wide that the Queen of Caria is still strong to deter others from attacking her as she is currently pretty weak

This theme also goes on down the family. Margett is an Omen, (people born with horns coming out of their body and thrown into the sewer of their capital because of how grotesque they were born) who's only purpose is to guard the front gates of Goldricks castle so people can't get a piece of the Elden Ring. In reality, he is Morgott, Merica's son, and someone who has a claim to become Elden Lord. Millenia looks like a holy warrior, when in reality, she is a poor woman suffering by rotting from the inside out. Godrick looks like a respectable king when he is actually a barbarian who just wants to throw hands with the boys. Even the names of the family are similar to continue this facade, to confuse the common people into thinking that the royal family is better than they actually are. All to continue Merica's tyrannical Golden Order.

Rune of death being unbound is good. It means things can die but also new life can be born. It was sealed to give everyone eternal life. It did not go well. Thats why things look so gnarly. Corruption and sickness still happens so you get eternal suffering instead of the peace and mercy of true death.

Only the power of this rune can kill something permanently. It being unbound means death is now indiscriminate. Things can die naturally again.
I think you might need some context for these cinematics just shooting off. That's not really how the game works. You might have like 10 hours of playtime between seeing cinematics.

So Ranni says, "Fine, fight how I remember my mom being a s a little girl" and conjures a duplicate. And since it's your parent, she's huge, and powerful, and never cries at nothin.

Radahns cut scene was showing the stars finally being set free because radahn was so strong he was holding the stars in place with his gravity magic
