It's a great question! If the cake is covered with buttercream or chocolate ganache and is very well chilled, you can easily flip it upside down without any fear of damaging it. I usually chill cakes overnight before decorating them with fondant. As another option, it's also possible to measure the sides of the cakes with a ruler, cut the fondant panels of the exact measurements and apply them to the sides of the cake without flipping it. It will be much easier to cut the fondant if you will refrigerate it for a couple of minutes.

I cut out the pieces from colorful fondant and let them dry completely before decorating the cake.
