    Idli aur sambar banane ke liye, pehle idli aur sambar ke alag-alag ingredients ikatthe kar lein. Yah ek aasaan aur tasty recipe hai jo urad dal aur chawal se jaldi banayi ja sakti hai.
    #Idli Banane ki Vidhi:
    ______________________
    *Ingredients:*
    - 1 cup urad dal
    - 2 cups chawal (idli chawal ya regular chawal)
    - 1 tsp methi dana (fenugreek seeds)
    - Salt (namak) swad anusaar
    *Vidhi:*
    ____________
    1. Urad dal aur chawal ko alag-alag dhokar, kam se kam 4-5 ghante ya raat bhar bhigo dein.
    2. Pani nikal kar, urad dal ko methi dana ke sath pisen aur achha paste banayein.
    3. Chawal ko bhi pisen, lekin halka-mota rakhein.
    4. Dono paste ko milayein aur salt mila dein. Batter ko kam se kam 8-10 ghante ke liye ferment hone ke liye rakh dein.
    5. Fermentation ke baad, batter ko achhe se phir se milayein. Agar batter bahut gaadha hai, to thoda pani mila sakte hain.
    6. Idli steamer ya cooker mein pani garam karein. Idli moulds ko tel lagakar batter se bharein.
    7. Steamer mein idli ko 10-15 minutes tak steam karein ya idli pakne tak.
    8. Idli ko nikal kar, garam-garam parosein.
    #Sambar Banane ki Vidhi:

    *Ingredients:*
    __________________
    - 1 cup toor dal (arhar dal)
    - 1/2 cup tamarind pulp (imli ka ras)
    - 1 chopped onion (pyaaz)
    - 1 chopped tomato (tamatar)
    - 1-2 green chilies (hari mirch)
    - 1 cup mixed vegetables (gajar, beans, bhindi, etc.)
    - 1 tsp mustard seeds (sarson ke beej)
    - 1 tsp cumin seeds (jeera)
    - 2-3 dry red chilies (sukhi lal mirch)
    - Curry leaves (kari patta)
    - 1/2 tsp turmeric powder (haldi)
    - 1 tsp sambar powder
    - Salt swad anusaar
    - Oil (tel)
    - Fresh coriander leaves (hara dhaniya) for garnish
    *Vidhi:*

    1. Toor dal ko dhokar, pressure cooker mein 2-3 seeti tak paka lein.
    2. Cooker mein seeti ke baad, dal ko mash kar lein aur side mein rakh dein.
    3. Ek pan mein tel garam karein, phir sarson ke beej, jeera, sukhi lal mirch, aur kari patta daalein.
    4. Iske baad, chopped onion aur green chilies daal kar bhunein. Phir tomato daal kar, tomato ko naram hone tak pakaein.
    5. Haldi, sambar powder, aur namak mila kar, mix karein. Phir mixed vegetables daalein aur sabziyon ko thoda bhunein.
    6. Pani aur mashed dal mila kar, tamarind pulp bhi daal dein. Sambar ko 10-15 minutes tak medium flame par pakaein.
    7. Sambar ko hara dhaniya se garnish karein aur idli ke sath parosein.

    #Nariyal Dahi ki Chatni Banane ki Vidhi:
    *Ingredients:*

    - 1 cup grated coconut (khoopra)
    - 1/2 cup thick curd (dahi)
    - 2-3 green chilies (hari mirch)
    - 1-inch piece of ginger (adrak)
    - 1-2 garlic cloves (lehsun) (optional)
    - Salt (namak) swad anusaar
    - 1/2 tsp mustard seeds (sarson ke beej)
    - 5-6 curry leaves (kari patta)
    - 1 dry red chili (sukhi lal mirch)
    - 1 tbsp oil (tel)
    *Vidhi:*
    ____________
    1. Blender ya mixer mein grated coconut, green chilies, ginger, lehsun, aur salt daal kar thoda pani mila kar fine paste bana lein.
    2. Is paste ko ek bowl mein nikal kar, usme dahi mila dein aur achhe se mix karein.
    3. Ek small pan mein tel garam karein, usme sarson ke beej, sukhi lal mirch, aur curry leaves daal kar tadka laga lein.
    4. Is tadke ko chatni ke upar daal dein.
    5. Chatni ko achhe se mix karein aur thoda thanda hone ke baad idli ke sath parosein.
