  • Todays video is about making a pork butt on the timberline 850. We did super smoke mode around 220 degrees for 5 hrs then cranked it up to 250 for the remainder of the bbq. The pork butt was seasoned with Wright Rub all purpose seasoning.

    Just took the leap of faith into the traeger timberline 850 world . We cooked a 20 lb Angus Brisket for 10 hours , It turned out amazing . We Never cooked a brisket before but after watching Alot of people on UA-cam , it gave us confidence. We bought some pork butts and can't wait to try this out. We thank you and all of the UA-cam community for as Harry Sue says " spreading the BBQ Love "

    Did this exact process for New Year’s Day (less the Wright Rub - but used something similar that was on hand), and it turned out amazing. Took mine about 13.5 hours for a final internal temp of 203°. Thanks for putting this out! I wouldn’t have known what to do without it. Keep on Q’in!

    I agree with you on not needing a binder for the rub. I have never had my rub jump off the meat while cooking. xD

    I have the Treaguer pro 34 and have been using the app for directions , on the app it had me at a 250 degree smoke and I've been going about 10 hrs, I think I'll try lowering the temp and adding more time. I've done 2 so far and they turned out great just looking to fine tune the process! Great video!

    Good looking meat. Nice and red. I normally do my pork butts on a stick burner but I have an old Traeger and a Blazn Grillworks Gridiron that I love too. Sometimes I take five or six charcoal briquettes and line them up back from the fire pot and they will burn for several hours increasing the flavor of a standard pellet. Lots of smart mouths out there who love to knock the pellet Grill. You are nuts not to have one unless you have unlimited time to build fires. Fantastic for everything from cheese to pizza. Damn nice scald you put on that butt. Got my eye hard.

    Went with ribs today, still wrapped at the moment and noticed I was using the same Rachael Ray pan that you have when I wrapped it, haha, My orange pieces fell out awhile ago though. I'll have a video up tomorrowish with the cook. Next weekend will be the butt, it's good till the 16th. My grill probe pooped out so I'm glad I went with ribs.

    Nice job buddy! Very nice and helpful video. Looks incredible. Wish I had the "extra smoke" setting on my traeger. However I use a blend as you do and will be slow rollin' for as long as it takes on my first one. Central Texas Brisket, tons of ribs, pork belly, chickens, and tomahawk steaks completed. Pork Butt is the last to try. (kinda did it all in reverse but great results on each!) Looks great and we need you at the Rays!! Tampa is a great town to play baseball! haha cheers man!

    Is the center of the pork butt smoky tasting as well? See I have a Little Texas Pro Traeger, but it only makes smoky the outter portions of the meat where it doesn’t penetrate deep inside. Any suggestions on what I may be doing wrong? Thanks for your time & efforts…

      yes I think it was. A pellet grill will have less smoke taste than say a stick burner. You could add an additional pellet tube on the inside for more smokey flavor. Thanks for watching brotha

    I’ve had my Timberline 850 for a month and am loving it. I haven’t tried pork butt yet but now I need to give it a shot. You cooked for 13 hours, any idea how many pounds the butt was? And I think you said you went to an internal temp of 160. Is that correct?

    I’m curious if you have ever wrapped it in foil after it hit the 160* mark and cooking it wrapped for the duration .. does it change the tenderness by not wrapping it ? Just curious on your take.

      I definitely have done it that way. Wrapping creates almost like a steam bath for your meat. It can definitely make it more tender. If i were having a problem getting mine to turn out tender I would suggest trying to wrap for sure. Id go to about 170 internal then wrap

      Wrapping keeps the bark from getting too acrid. The meat only takes so much smoke before building access bark. Getting it right in the middle is what its all about whether Wrapping or not. No 1 way to delicious

      Brisket, mostly fat side up unless like a direct heat cook like a drum smoker.

    I might do a butt on my kettle with the slow n sear tomorrow. If not, ribs for sure. Just did my 1st butt a couple weeks ago, but it was a boneless one, got a 9 pounder today bone in so it most likely is going on in the morning. That Traeger looks awesome, just not in my budget yet.

      Hey i appreciate you stopping by. I recommend a pellet smoker to anyone who may not have the time etc ti manage a fire all the way through. A pellet smoker will be easier to learn on. But i started out with a stick burner and i think it helps to understand that cooking method before having a pellet smoker. With that bein said, it all comes down to your personal preference. Im happy to answer any questions you might have just shoot them in a comment #cheers

    Love that grill man. And the butt looks fantastic. Put left overs in bbq beans I got a good recipe on my channel for beans

      No i have not. Weve brined brisket before smoking but not a pork butt

    Traeger are just one big oven, you will not get smoke taste on the pork

    Sorry, but the Traeger is not a pellet SMOKER but a wood-fired pellet GRILL. Yes, you can introduce some smoke, depending on your model and/or type of pellets used, but a lot of people are disappointed after buying a Traeger because they thought they were buying a smoker.

      This is in fact a smoker as well.. it has super smoke mode which allows it to produce smoke more

      Having “super smoke” mode does not magically turn your Traeger into a legitimate smoker. I would challenge you to find any statements on Traeger’s website or printed literature that describes their product as anything but a wood-fired pellet grill. They do not use the term “smoker” with any of their grills, even those with “smoke science” or “super smoke” mode.

    Watch that Traeger carefully, mine has caught fire 4 times.

      @@NorthTexasBBQAddicts cleaned it every one or two cooks thoroughly. Customer service told me I needed a new control unit and a new temp. probe and they sent them to me free of charge (after several weeks of waiting).
      After replacing the old ones smoker worked great on the first time. On the second cook it caught fire again
      when I turned the temp. to a lower setting. I don't trust the Traeger and never will again. Had I not been present during the times it caught fire my house could have been burned down.
