- Today, we have a look at a very special wine - Ellis Wines’ magical 2012 Cabernet Sauvignon.
Ellis Wines is a quickly emerging winery in the Heathcote/Bendigo wine region. Over the years, they have produced a number of notable wines. This 2012 Cab Sav was in fact our Wine Hunters wine of the year in 2018. Their Viognier took home the trophy for Heathcote’s best white wine at the 2019 St Martin wine show. And their 2015 Merlot was sublime. Most recently, their Shiraz picked up a whopping 97-point score from James Halliday. How’s that for excellence across a diverse range?
As you all know, Heathcote is our favourite wine region in Victoria. Heathcote is best known for its Shiraz, and rightly so, but as I just listed from past Ellis Wines gems, the region has potential for so much more.
2012 Cab Sav Tasting Notes:
This wine is simply astounding. In some ways, it is really hard to capture in words. On the one hand, I want to say that this wine is all raw power, and clearly, it is very, very powerful, yet it has no jagged edges, or really no edges at all. It’s just wave after wave after wave of delicious mouth-filling flavour. And there’s a breadth to this wine. It really spreads itself right across the palate. And interestingly, the typical Cab Sav flavours in this wine are quite subdued - nothing green or herbaceous about it at all. The flavour that does come through I can only describe as, well, delicious.
What food do you have this baby with? It needs a large steak. Large because it’s going to take you a little while to get through such a mighty wine.
What friend do you have this with? Once again, a wine of this stature should only be shared with your very best friends.

Vasse Felix is probably the godfather of Cab Sav in all of Austalia. No conversation about Cab Sav is complete if you have not tried Vasse Felix.
Also in the Margaret River, McHenry Hohnen’s Hazel Vineyard Cab Sav is an absolute beast. It will rip your head off - must try!
Battle of Bosworth in McLaren Vale makes a beautiful organic Cab Sav on the lighter side that ballerinas its way across the palate.
And finally, Soumah Wines in the Yarra Vallley crafts a beautifully complex Cab Sav as well.
