Already have a weber kettle but that is a slick machine. The slow roller and divide/conquer system make it much more versatile than my old kettle. I would definitely be interested in the slow roller for my kettle.

That's a great question. For brisket and low and slow bbq, I like to find large chunks and pieces of charcoal. When you do that you can get away with doing hand basket with huge pieces and good vent settings. If you are going 12-18 hours, you can fill up but just make sure you have good air flow. If your doing direct grilling, same principle finding good pieces but not as concerned as it will be quicker cook if grilling vs bbq.

There is 5" from fire box to grill grate without sloroller. You can put grill grates lower by fire box for two zone cooking which is 2" from fire box. I don't have a big joe but I'm seeing that big joe heat deflectors fit this nicely too!
Thank you so much. I would say it depends on what experience you want long term. The actual ceramic will hold temperature better being a Kamado for long cooks. But, you still can get incredible quality with kamado features at $499 with kettle which includes sloroller. You'll be in good shape either direction.

So far, I haven't used a water pan on 2 long smokes and food was still moist. I think it holds moisture well. I also don't think it would hurt to do it. I'll continue to experiment and see!
Hey Stephen, I cooked this in about 5 hours plus a 1 hour rest. Temp was around 250-275 with it holding steady. I had plenty of charcoal for this length of time. However, I would for sure need more charcoal or reload if I were going longer or overnight in my opinion.
I agree with you and will probably make that modification myself. Overall, it does a great job with low n slow & hot & fast. Just a few simple things I would enhance. This is a pre-production kettle joe in the video.
@@BartlowsBBQ cool thanks! I ask because my KettleJ was useless until I added a felt gasket on the lid and slow roller as well as caulking the bottom vent plate. Works well now but before I did it run away to 450f even with all vents 100% closed.
I didn't have to add any charcoal and had a bit left over. However, If I was doing a 10 + cook I would fill it up to the top and probably would need to refuel. Overall, 6-8 hour cooks I have been great with initial charcoal and heat retention with ceramic fire box seems to do well.

Actually, I just did a video with the kettle sloroller with a 22" Weber Kettle. I thought it did a great job cooking ribs. I don't normally cook on a Weber Kettle to say if it performs better with other low n slow mods for the weber. But, I would put my money on the Kettle Joe with sloroller would outperform a weber kettle by itself.

Thank you so much. It has a ash disposal but not grease. You can use a round pan to catch drippings depending on your grill setup.
