- Ingredients:
4 Limes
1 Sour Orange
1 Tablespoon of Salt
Tomato Paste

Epis Ingredients: 1/2 of Green Bell Pepper
1/2 of Red Bell Pepper
1/4 Teaspoon Salt
1 Teaspoon of Black Pepper
Green Onion
4-5 Cloves of Fresh Garlic
Fresh Parsley1/2 Habanero Pepper
4-5 Tablespoons of Olive Oil or any Oil you have available
Baking Steps:
To begin, start by halving the leg quarters and removing any excess skin if you prefer not to eat it. Ensure to clean the chicken by removing veins from the leg portions. Squeeze lime halves and discard half of the lime skin. Mix sour orange juice, lime juice, and a tablespoon of salt with the cleaned chicken. If not cooking the same day, marinate for 3 to 4 hours; if overnight, marinate in the fridge.
Before cooking, rinse the chicken in cold water and pour boiling water over it to remove slime. Combine seasonings and tomato paste, then add to the chicken. Preheat oven to 350°F and bake for an hour, flipping halfway through to ensure even cooking. Remove from oven and serve your delicious baked chicken.
