    That's right - the 3 best words to have in a sentence. These unbelievably tasty treats can be made in any shape or size - I love the look of these loaf tins but any shape will work!

    Ingredients:
    Cake:
    250g unsalted butter
    250g caster sugar
    200g egg
    250g self raising flour
    Zest of 2 lemons
    Meringue:
    50g egg white
    100g caster sugar
    25ml water

    I love your videos! I’ve watched so many baking videos and unsubscribe because I find my head elsewhere but I’m always tuned in to your videos! Great recipes and techniques ❤️ Also I’ve noticed you always use that spatula with the red handle and browned edges lol.. I have a favorite one that is browned up as well.

    You're amazing!!! Your videos make so much sense and I learn something new in each one. You should upload more often and stay true to the nature of your channel which has been videos on the longer side but each second is enjoyable. I think if you stick with it you will become a youtube success!

    BEST RECIPE EVER,
    I done your ingredients your 250g batch but instead of doing your method i creamed the butter and sugar added eggs and flour and lemon zest until pale and fluffy and i also went to lakeland to get the same mini loaf tin and because your batter is a lot thinner than mine yours made twelve but actully i creamed mine to create more volume and lightness so mine actully made nineteen i didn't do the italian meringue or lemon candies or curd but i made a glaze with 2 lemon juice and 60g of caster sugar it was a nice recipe anyway even though i changed it up a bit but it would be nice if you done my way just once and you might get extra like me

    Hi Georgia, I have been looking for cake recipes to make in my mini loaf pan like yours. I've seen recipes for pound cake recipes. But I'm interested in other cakes and savory dishes to use in this three years old new mini rectangular loaf pan. No one on UA-cam has responded to my request. Will you please help me? I will like to make a Buttermilk Vanilla Cake especially.

    Can i swap out the butter for oil? Butter here in Australia is rising in prices everyday :( Im using this recipe as a base for many many cakes I'm making for a market. Thanks so much xoxo

      I can imagine..! Yes you can - its not ideal to cook with oil but it works!

    This is my second time trying to attempt these cakes and every time I've made them they sink in the middle and it's Hollow and I'm doing exactly what you say

      They may not have cooked all the way through - they sink when the cake isn't cooked

    Hi Georgia. Is this a method for making cake you devised yourself? A one pot method just seems fantastic! I hate the creaming method! I would love to see the inside of a cake that is made this way.

      EXCUSE ME... here in US I have been using a CUP of Sugar and a Stick of Butter for over 50 years... and it has worked very well THANK YOU VERY MUCH!!!

      @@judichristopher4604 Well bully for you. We don't get butter by the sticks where I live, we get it in weight. And cup size varies from what I've seen. The measuring cup sold here is generally smaller than what I've seen used in video recipes. And don't tell me to buy from Amazon because only they have the correct size. Weights are the same wherever and whenever and any self respecting home cook should have some kind of kitchen scale. You keep using your stick of butter and cup of sugar and I will use a scale.
