    Allulose is an excellent sugar (free) substitute in ice-cream. I also use Tara gum. I now have a hankering for boysenberry swirl ice-cream ...

    I always use parchment with store bought ice cream as soon as I open.. I think it reduces ice crystals

    Thanks for the tips. I've been making frozen vanilla custard lately using 6 egg yokes. I also lowered the freezer temp since the custard is rock hard after freezing. Neither the yolks nor the lower temp made a difference. So I bought Xanthan gum today and hope it helps.

    I've been waffling on the Ninja Blender. I like but not sure, you know? But I've seen you use it...it heats, blends and who knows what else. It's really kind of amazing what you've shown it can do.
    Ice cream...homemade ice cream well, come on what could be better. And just like that (picture me snapping my fingers like Mary Poppins)
    Everything you make (whether it's something I think I would make or to my own taste) teaches me something new. Thank you so much for what you do.

    I suppose that your recipe would make ice cream a bit less expensive. When I look at ice cream prices, woah! So it is worth a try. I would do a matcha one, it is so good. I love the trays you use, if these were use in a circular economy by restaurants and grocery stores to be taken back and reused, our planet would be in a better shape. I think they could be useful in a zero waste lifestyle. Thanks

    Xanthan gum is really special, it activates at lower temperature compared to other gums. My favourites are gum mastic and salep though. With preheated milk and xanthan I dont even need added sugar to make smooth ice-cream

      You may want to look for non-GMO Xanthan gum, as most is made from GMO Soy Beans

      I'm sure that would work just fine. The only thing I don't know is if you would still need all of the xanthan gum or not.

    Thank you for these amazing video abs superb Facebook group. You are the best! Do you have recommendation for a dairy free version for the lactose intolerant? Would coconut cream work ? And if so, how much ?

      Thank you so much! I haven't experimented with non dairy versions, so I really don't want to just guess. Ice cream can be tricky. I would look up some non-dairy versions and see if the coconut cream or coconut milk (or a combination) is used and then substitute it.

    That Ninja blender is intriguing!! Can you make mayonnaise with it? I’m looking to replace my Vitamix at some point. Also, I realize this is an older video, but have you tried the Ninja Creami for ice cream? How does it compare to your blender merhod? I’m off to watch the coffee ice cream video now!! My fave second to peanut butter!! ❤ 🍦

      I can't make mayo with anything apparently! LOL I've tried in all kinds of blenders and it simply is horrible every time. There is a very deep well in the cold and hot blender, so you would need to make a significant amount for it to blend properly in my opinion. I have tried the creami and for me it's been hit or miss with different recipes I've come up with. I'm still working on it. Because of the way it shaves the frozen mixture, I end up with fluffy astronaut dust most of the time and then have to fix it. When it works, it works great though.

      i would buy that vitamix.. better than the Ninja and I can tell you why but then you wont be getting rid of it

      Each fruit is a little different in water content and I haven't tried mango yet, so I'm not sure if the same base would work well or not. Let me know if you try it!

    I have the ninja creami and my ice cream has been freezing rock hard after freezing. I used monk fruit instead of sugar not sure if that is why 8 got those results. I do have the xanthum gum so I will be trying that. Where did you buy the containers?

      I've been playing around with different bases for the Creami and my issue is what I call "Astronaut Dust" It happens on regular sugar and sugar substitute bases, so I'm wondering if that is what is happening to you. The base is frozen, I run it through the Creami and it's a fine frozen powder. I'm not sure xanthan gum will help with that. The containers were from Pampered Chef, but they discontinued them last I checked.

      It will freeze, but in my experience it is very icy without the xanthan gum.

    Made this not sure where went wrong. Followed the recipe we placed it in a Pyrex glass container with snap on lid. We used the parchment paper but it didn’t touch the ice cream mixture. Froze it over night. The ice cream came out very icy. Is that parchment not touching or not filling it up to the top cause all those ice crystals? Thanks

      I put the parchment paper right on top so it is touching. A few other people have told me that their strawberry ice cream came out icy as well and I'm trying to figure out why. Did you make any changes at all to the recipe, even a tiny one? Mine was so smooth and creamy and trust me I had tried many times before and it was always so icy, so I was thrilled that adding the xanthan gum worked so well.

      DivoRN I followed the recipe to a tee as well and it was icy 😔. I covered with it with waxed paper and placed in a shallow tightly sealed container. I’m not sure but I think it might have been either the wax paper or that I didn’t allow the strawberries to dry out enough. I plan to try the vanilla one she is working on next. If at first you don’t succeed try try again.😁

      Could it be the Pyrex that was the problem as it would take longer to get cold? I know some type of metal container is recommended... preferably frozen. Let me know what you think...

    Can this be vanilla ice cream? Omit the strawberries and maybe add a scraped vanilla bean?? I saw where you made some in another video but I don’t see the actual instructions

      The vanilla ice cream will be coming out soon. I used a different technique and made a custard base for the vanilla. I will work on a vanilla bean without the custard base soon.

    Can you use half n half instead of the cup of cream and the cup of milk? I have a Ninja Creami and I am experimenting with ice cream recipes!

      half and half won't add the richness and it doesn't prevent ice crystals like cream does, but with the Creami you can certainly give it a try since it essentially shaves the frozen mixture.

    Can I swap Heavy cream with Greek yogurt?

      Try this instead. Put 2 parts frozen strawberries with 1 part frozen yogurt and blend it in a high speed blender. I do that a lot and it makes the best frozen yogurt. You can even make them up head of time and freeze and then blend before serving. In my experience, Greek yogurt will freeze too solid to be used as scoopable ice cream.

      I think frozen (even thawed) are going to be too watery and create ice crystals in your ice cream. I've only tested the recipe with fresh.

      A hand mixer isn't really going to get the strawberries blended smooth I don't think.

    If you double the recipe, does that also mean it’s 3 tsp xanthan gum? Seems like a lot. Well I did use 3 and it’s the freezer now but it was gummy.

      I only tested the recipe as written, but with xanthan gum it's always better to use less if you aren't sure.

      @@TheSaltedPepper i use guar gum always in soft serve and get best results. Its like 100gm milk powder, i teaspoon guar gum, 250gm sugar, 1 liter water. Mix all in grinder and make put in soft serve machine but it only works in soft serve machine not in freezer.😁

      No, I used whole milk and heavy cream. Skim milk has a higher water content and most likely will result in ice crystals forming when frozen.

    Idk, I think the ice crystals have more to do with the freezer than anything else.

      In ice cream it's mainly the sugar ratios that control the ice crystals. Unless you have a freezer that stays at the temps like the ice cream freezers do, which is less than freezing, then you wouldn't get the crystals because it never truly freezes.

      That simply isn't true. In fact I'm working on low sugar/no sugar sorbets and ice cream now. I also have several healthy recipe videos. My question for you is why would you comment on an ice cream video if you are looking for healthy food videos? Doesn't quite make sense to me, but I hope you have a great day nonetheless!
