Great project guys! If it were me I'd be using some ply to make a template copy of the top, doing it in maybe 400-500 mm sections and using them to cut out some capping and joining the sections with compound miters. If you had the time/patience you could could even extend the width of the capping by 20-30 mm each side and rout out the center using the template so the capping sits over the face hiding the joint. Probably a lot of work but you've done so well with this why not finish it off.
