  • Rich in fat and in taste - one tiny village in Tuscany produces one of the most famous Italian delicacies that is certain to make connoisseurs’ mouths water: Lardo di Colonnata, the bacon from Colonnata. What sets this bacon apart is the fact that like many an ancient ruler, the bacon is buried and cured in marble caskets. How, and why, this is done, and what you‘re left with at the end - is what we went to find out in Italy!

I grew up on wet brined pork fat while visiting my grandfathers in the romanian countryside, I miss it so much, but I sure wouldn't mind giving this a taste :)

In Ukraine, Russia and Belarus it's called "Salo" and every grandma makes this type of salted larde, so the "There are only 12 artisians who know how to make it" seems like another attempt to glorify already overglorified cuisine even more :)

I doubt that eastern europeans make larde in 200+ years old marble pots. Of course larde is made everywhere, pretty much in all of Europe there are local producers of it. This one tho is really peculiar and made only in that small village as far as I know. It's not the product in itself that's rare but it is the technique used to prepare it that makes this larde stand out.

no faster way to discredit one's self than to refer to italian cuisine as over glorified

@@MrRorchack A fancy salo is still salo. But it's definitely not bacon, lol.
