Grilled Tuna Melt | Tuna Sandwich Recipe | Spatchcock Funk

  • We love the classics, but we love flipping them on their heads even more. Remember when the great Jimi Hendrix leveled up the great Bob Dylan’s "All Along the Watchtower" by adding some face-melting electric guitar solos? That’s what we’re doing with one of our favorite classic dishes, the very American tuna melt. We got some provisions from our friends at Epicuse to take this classic tuna sandy and absolutely shred into the atmosphere. The best part is this is really fun and easy to make, so throw your hands up and get ready to rock, because this sandwich takes it to the next level. Gooey, cheesy, a little crunch and a perfect combo of salty, sweet, and fatty to make tuna and whoever eats it feel like a rockstar. The best way to describe the end result when it comes off your grill or stove is when you think about one of your favorite classic songs being covered by one of your favorite bands, for us that might be Rage Against the Machine covering Bruce Springsteen’s the Ghost of Tom Joad.

    Ingredients (Makes 4 Sandwiches, 2 if You’re Making Monsters)
    • 2 cans of a really good canned tuna in oil, we used Cole’s which is in a glass jar, drained
    • A dash of garlic powder
    • 1 Tbsp of finely minced mild or spicy giardiniera or pickled sweet peppers
    • ¼ C diced red onion
    • ¼ C diced celery
    • 1 Tbsp of diced fresh dill
    • ¼ tsp of ground black pepper
    • ¼-⅓ C mayo (we go towards more for this recipe) for tuna mix
    • ¼ C mayo for bread
    • ¼ lb salted butter
    • 1 tsp of dried parsley
    • 1 tsp of Dijon mustard
    • 1 Tbsp of finely chopped cornichons (mini dill pickles)
    • ¼ lb of bacon slices, cooked
    • 2 Tbsp of tomato jam (or pepper jam if you choose)
    • 4-8 slices of a good, sturdy white bread, we like sourdough
    • 8-10 slices of gruyere cheese or really, really sharp cheddar cheese

    Directions
    • Cook your bacon, set aside
    • Combine the tuna, garlic powder, giardiniera, red onion, celery, dill, black pepper, and the first bunch of mayo in a glass bowl
    • Take your bread, and rest on the counter, spread a thin layer of mayo on the side facing up, and sprinkle with dried parsley
    • Meanwhile, on your flattop or your skillet, turn to medium high heat, throw the butter in there
    • Take one piece of bread, and spread a thin layer of the tomato jam on it
    • Slap a piece or two of that good cheese on the spread
    • On the other slice, put a ⅓ cup or so of the tuna mixture
    • Combine the sandwich, place into the pan or on the flat top, cheese side down, and grill for 2 minutes until golden brown
    • Flip the sandwich over, grill for another minute
    • Take a bit and melt your face off
