  • Surnoli is a traditional Indian dish originating from the Konkan region, particularly popular in the states of, Karnataka, Maharashtra and Goa. It is a type of sweet dosa or pancake made from fermented rice and coconut batter.
    Ingredients
    Rice: 1 Cup, Typically, regular white rice or parboiled rice is used.
    Coconut: 1/2 cup Freshly grated coconut adds a rich texture and flavor.
    Jaggery: To taste, Unrefined cane sugar which gives the surnoli its sweetness and a distinct caramel-like flavor.
    Fenugreek Seeds (Methi): 1 tsp, Added in small quantities for their health benefits and to aid fermentation.
    Yogurt or Buttermilk: 1/2 cup, Used to ferment the batter, giving the surnoli a slightly tangy taste.
    Turmeric: 1/2 tsp, Adds a vibrant yellow color and subtle earthy flavor.
    Salt: To taste.
    Preparation
    Soaking: Rice and fenugreek seeds are soaked in water for several hours or overnight.
    Grinding: The soaked rice and fenugreek seeds are ground into a smooth batter along with grated coconut, jaggery, salt, turmeric and buttermilk
    Fermentation: The batter is left to ferment overnight or for about 8-10 hours. This process is crucial as it helps in developing the characteristic flavor and texture.
    Cooking: The fermented batter is mixed well, and a small amount is poured onto a hot, griddle or tawa. It is spread out slightly and cooked on medium heat. Unlike regular dosas, surnoli is not flipped; it is cooked covered to ensure it cooks evenly and remains soft and spongy.
    Serving
    Surnoli is typically served warm, often with a drizzle of ghee (clarified butter). It can be enjoyed as a breakfast dish, snack, or even a dessert due to its sweet flavor. Some variations might include adding cardamom or saffron for additional flavor.
    Surnoli is loved for its soft, fluffy texture and the delightful combination of sweet and tangy flavors. It is a nutritious dish that reflects the rich culinary heritage of the Konkan region.
