  • **** Italian Pork Roll Ups ****
    6 Boneless Pork Chops - pounded thin
    6 Slices Prosciutto
    1/2 C Ricotta Cheese
    2 Tbsp Parmesan Cheese
    1/4 C Mozzarella - Shredded
    1/2 tsp Garlic Powder
    1 Tbsp Fresh Parsley - chopped
    3 - 4 Basil Leaves
    1 Tbsp Olive Oil
    1 Small Onion - sliced
    2 Cloves Garlic - minced
    1/4 C Chicken Broth
    2 C Marinara Sauce
    1/2 tsp Oregano
    Salt & Pepper to taste
    Flatten chops between plastic wrap and season with salt & pepper.
    Place a slice of prosciutto, 1 Tbsp cheese mixture & 1/2 leaf of basil. Roll up and toothpick closed.
    Heat olive oil in pan on medium heat. Place pork rolls in heated pan browning on all sides. Remove from
    pan and set aside.
    Add onions to pan stirring until they just start to turn translucent, add garlic and stir until
    fragrant. Add chicken broth scraping the brown bits off the bottom of the pan. Add marinara
    sauce & oregano. If you have any leftover basil you can add that to the sauce as well.
    Place pork rolls into the pan and cover. Cook for 15 minutes flip roll ups and cook for an
    additional 15 minutes.
    **** Honey Garlic Pork Tenderloin ****
    1 Pkg Pork Tenderloin ( 2 per pkg)
    2 Tbsp Olive Oil
    4 Cloves Garlic - minced
    1 tsp Garlic Powder
    1/4 tsp Paprika
    1/4 tsp Black Pepper
    Sauce
    1/2 C Honey
    2 Tbsp Light Soy Sauce
    3 Tbsp Apple Cider Vinegar
    Mix garlic powder, paprika & pepper in a small bowl. Rub onto meat.
    Make sauce in a small bowl.
    Heat oil in an oven safe skillet. Place meat in skillet and sear on each side. When meat is almost finished push tenderloins to the side and add the garlic. Cook until golden brown. Pour sauce into pan and place into 350 oven for 20 - 25 minutes or until meat is around 140. Place pork on a dish and cover with foil.
    Return skillet to stove top and reduce sauce until thickened. Slice meat and pour reduced sauce on top.
    **** Crock Pot Crack Chicken *****
    3 lbs Boneless Chicken Breasts - trimmed
    1 pkg Ranch Seasoning
    1/2 C Scallions - chopped + more for garnish
    1 lb Bacon - cooked and chopped
    2 8oz Cream Cheese
    1/2 C Chicken Broth
    1 1/2 - 2 C Cheddar Cheese - shredded
    Place chicken in crock pot, top with ranch seasoning, scallions, bacon, cream cheese
    Pour in chicken broth.
    Cover and cook 3 - 4 hours on low or 2 - 3 hours on high.
    Shred chicken with 2 forks inside the crock pot. Top with cheddar cheese, cover and cook
    an additional 15 minutes or until the cheese has melted.
    Garnish with additional scallions.
    Serve over rice, mashed potatoes or on a bun.
